South Beach Dieters......... Unite

I completed Phase 1 but I did feel very lightheaded and weak for several days during the first week and just "not myself." However, I kept reminding myself that I (as the book says) am changing my blood chemistry for the better and just kept at it. I did lower my exercise during those two weeks just because I did not feel great.
I'm stil a newbie, but in Phase II I allow myself freedom to eat allowed veggies, fruits without limit. I could go wild with nuts and cheese, so I limit that because I know it packs more calories. I also allow myself fudgesicles as a treat at least once a day - sometimes twice. I try to avoid the starches except old-fashioned oatmeal, which I eat several mornings a week.
 
I have a question too. Do all you experienced South Beachers avoid watermelon and pinneaple? I read somewhere bananas (small) are now "allowed" which is great. I love both watermelon and pinneaple so I have bought both and am still doing ok on South Beach. I just don't make them my first fruit of choice, but I think the benefits of fresh fruit outweigh any weight concerns! I also noticed the Phase 1 restrictions on tomatoes changed, which is great because I was eating a lot of tomatoes on Phase I and continue to do so. I still don't eat corn, carrots or potatoes at all, and I can live without them. My grandmother used to have the best corn on her farm when I was a kid (I think it was called Silver Queen) and I have never found any so good since so it is not a hardship to give up corn right now. I used to eat a lot of carrots as a snack food and as veggies, but I find I now choose celery as a snack food and opt for other veggies at the grocery store.
 
I don't eat either. However, I've never been a big fruit eater anyway. I have always preferenced to have veggies instead of fruit. I'm hoping someone else can answer that question for you. Have you checked the little book that he has concerning acceptable foods? I'll see if I can find mine and get back to you!
 

Calena - with any food, the best advice I can give is try it slowly and see how it goes. I ate watermelon and pineapple on occasion even when I was losing the bulk of the weight and it didn't effect me. Corn I still eat but only if it fresh on the cob. If I'm going to splurge, I want it to be the best I can have. Carrots were added to the foods to enjoy on one of the updates. Good Luck
 
I'm a big fruit eater so I'll have to refresh the do's and don'ts. I am weighing myself this afternoon at my sisters as I don't have a scale and I;ll let you know.
 
I love fruit but tend to avoid it simply because I'm afraid I'd eat too much of it. However, I usually end up having about 2 fruits a day. According the GFGC guide, pineapple and watermelon are to be avoided.

I seem to remember when I read the book the first time a few years ago, that tropical fruits were high on the glycemic index and thus should be avoided. Right there went all of my favorite fruits -- bananas, mangoes, and pineapple! But we can have bananas now on phase 2 (so happy about this), and mangoes are on the list, too. Wonderful news! Maybe I just remember incorrectly about what was allowed and what wasn't, but really glad bananas and mangoes are ok (in moderation, of course.) :banana:

By the way, I'm back from Orlando. We had a really nice time. I did great on SB at Sea World, not so great at Disney (Ghiradelli at Downtown Disney was just calling my name...just taunting me!!!) But, I figure it was one day, I'm back OP today. Did pilates tonight, plus tons of walking while we were in the parks, so hopefully my weight won't have been effected too much.
 
I was very happy with my weight loss yesterday. Did way better than expected but gonna check with my sisiter to make sure it was right. Almost 9lbs. Of course I've exercised everyday and have been really sticking to the program but boy I nearly died of hunger after going to the beach yesterday. All that clean, sea air!

Thanks Sheree, today was tough as there was a birthday party but I was good had a few veggies and a cheeseburger, no bun, just a little mustard and ketchup. Lots of water though and a little too much coffee today but ok with my first "food test".
 
S&K's mom -- Great job on your weight loss and making choices like passing up birthday cake (that's a hard one for me.) I also agree about going to the beach making you hungry! Why is that? My DS and I went to the pool at our local Y today and played for a little while and we were both starving when we left. Must have been time for a snack!

Well, I weighed this morning and I was dreading it because of my day off program. But, I managed to have dropped a pound this week. Yay! Must've been all the walking at the parks and the exercise the other days of the week. So I'm down a total of 19 lbs. Also, my 18w's are really loose -- woo hoo! I've been trying on some smaller clothes in my closet for motivation -- they're still pretty tight (and let's not even talk about those regular 16 denim shorts in my drawer that are really tight...) -- but I can do a regular 18 or a 16W in some things, so that's progress, right? ;)
 
Well today will be my second test! Off to the lake for the day. DH's aunt has junk food galore. So even though I am still on phase I I may just eat a lot of fruit instead of the chips, pretzels, donuts etc. I figure this is much better than litterally shoving cheese curls in my mouth and I'll just do an extra day on phase 1.
 
I like the beach. I feel better when I am on the beach and eating on plan. I am realizing how sensitive I am to many simple carbs and why I should avoid them. So... I feel like I am making progress. I do miss desserts though! Looking for a sugarfree cheesecake recipie. I am still eating a lot of fudgesicles - one a day- and this really satisfies my sweet tooth, but I do miss some of my favourites.
Thanks for the replies on the fruit. I think for me it "works" to enjoy the seasonal fruit and it satisfies my longing for something special after supper. I am still trying to incorporate the principles of the DASH diet as well which calls for a lot of fruit and veggies, low fat dairy etc.
What do you South Beachers pack for lunch when you go to work? I usually end up ordering a greek salad or bring along homemade tuna salad - with lots of cucumbers and celery and one apple. YUM!
 
I'd love a no sugar added or sugar-free cheesecake recipe, too! Our grocery store's bakery sells one, but they don't always have it in stock.

Also, Sheree', do you have recipes you can share with us for almond flour? I think you said you were using it? I would love to bake something with it...

Calena, lunch was always a diet-buster for me as I worked at a place where we always went out for lunch. Once I started working from home, I began making my own sandwiches. I love the whole wheat pitas, toasted, with turkey and some mayo. Yum!

At least I like them. Check out the whole website, this is where I got a lot of my ideas for dinner. As a matter of fact I still do. I have had that 3 minute chocolate cake the last 2 night (PMS!!!) Boy does it cure a chocolate craving :banana: Add some whipped cream on top and WOW!!! I know some of you really like the berries and you can top with that too. Make sure it is OP though!


Carbquik HB Bun-3.5g carbs

1 tablespoon melted butter
2 tablespoons almond flour
2 tablespoons Carbquik
1/4 teaspoon baking powder
1 jumbo egg

Stir all ingredients together very well. Place in a microwave save cereal bowl and cover tightly with plastic wrap. Poke 3 vent holes in the plastic wrap and microwave for 1 minute.


Three Minute chocolate cake

3 Minute chocolate cake

Ingredients -
1/4C Almond flour
1 T Cocoa Power
1/4 t Baking Power
4-5 packets of Splenda

2 T Melted Butter
1 T Water, or SF syrup
1 Egg

Total Carb count (ECC) for the whole recipe with 5 packets Splenda - 8.6

In a 2 Cup Pyrex measuring cup,blend all dry ingredients. Add water, melted butter and egg...mix throughly. Cover with plastic wrap (To vent, cut small slit in center of plastic wrap.) Microwave on high for about 1 minute (I microwaved for 1 minute 10 seconds...you need to adjust as you think is right). When this comes out of the microwave, it looks a bit wet but drys as it cools.

Cool a bit, eat warm with whipped cream or cool completely to ice cake. This could serve at least 2 people, maybe three. Cake without icing is 8.6 carbs. Folks have frosted it with cream cheese, twist, pudding, whipped cream, LC ice cream, etc. We had ours plain with ice cream. Very yummy indeed.

Does anyone know if you can substitute Equal where it calls for Splenda? I know it is twice as sweet a sugar, so I would assume you would use 1/2 the amount, but then I'm not sure if that would mess up the consistency. I'm more of an Equal fan than a Splenda fan (I know, very strange...) but will use Splenda gladly if that is what works best.

I don't see why not. I've read of other people substituting the various sugars. Some who have access to it even use liquid splenda
 
Well I admit it, I fell off the wagon. My one consolation is that I was as bad as I could have been. I only ate 1/4 of the bag of cheetos usually I would have had the whole thing plus chips. And pastry, yes I did. But what I found strange is that I felt really blah after. I so agree with Calena I feel so much better really watching the carbs. I felt my tummy just expand after just a few cheats.
 
s&k'smom, it'll happen all day long. It's funny now that I'm on phase 3 I still don't eat whatever because I hate the way that I feel after doing so!!!!
 
Hi all
Just checking in. I've been in and out of the house a lot this week. I've been really busy. I helped out with paintball camp at a Church Camp here in Ohio. I went up Sunday Morning and stayed the night Sunday Night and left Monday Evening for home. Drove the 2 1/2 hours home and went to bed. Got up Tuesday morning to go teach my one class I have this summer. After Class I drove the 2 1/2 hours back to the camp, spent the night Tuesday Night, drove home Wednesday Evening and just got home from Class on Thursday.
There was some good and bad news associated with the little trip. First the bad news. As far as eating on plan I tried my best but it was a losing battle. The camp served mainly kid friendly food. Things like pancakes, chicken nuggets, french fries, Spaghetti, and that was just Monday. Like I said, I did what I could. Got more meat sauce for less spaghetti, made big salads from the salad bar. Skipped the French Fries and had extra Chicken Nuggets (Not the most SBD friendly food but better than the french fries). I decide though when I started this that I needed to find a way to make this work in my lifestyle without making myself a huge inconvenience to those around me.

Now for the good news. I more than made up for it though in the activity department. From my cabin to the lodge was about 1/3 of a mile. traveled back and forth at least 3 times a day. From the lodge to the Paintball field was about 1/2 a mile each way the last section up hill. And we played twice a day. Add in Swimming in the pool, playing paintball, other games and general trying to keep up with a group of active 6th - 12th graders and I've had one tiring week so far You add the less than perfect eating with more activity than I've good in a long while and I'm down about 3/4 of a pound since Sunday. I'm now 1.5 lbs from my 100lb Clippie. I'm a little sore both from the paintball hits and some sore muscles but it was worth it. Looking back I would have never been able to be as active and had as much fun as I did this week a year ago. I'll need to watch myself the next few day and make sure I get back on a more closely to phase 2 eating and away from phase 3 eating. I do though have an offer to go to another Church Camp/Retreat this weekend. I need to let them know today if I'm going and I'm still a little sore so I'm not sure.
