Something special?

It'll be my birthday when I am out in Orlando and I wondered if anyone could recommend something special to do which could involve all of us (2 adults - 2 children aged 8 & 6).

Depends on your budget.
Swim with dolphins at Discovery cove but it's about £150 each for full day.
Balloon trip with Champagne breakfast around £80 each
Just spending day in Magic Kingdom and treating yourself to something special, your fav food or a gift?
 
Are you looking for something inside WDW such as a tour or a birthday fireworks cruise, or would you prefer something outside like Wayneg has suggested??
 

We recently did the Boggy Creek Airboat ride followed by the Swamp Buggy trip and thoroughly enjoyed both. We saw plenty of wild life including baby aligators, racoons, deer etc. It made a nice break from the parks too.

If you do consider this, try to find space in your luggage for binoculars as it is difficulty to get too close as the noise from the airboats scares the birds away. We still managed to see a bald eagle on its nest with its chick but having binoculars would have made it a much better experience.
