Something different for Easter lunch.. So what are you having?

I am planning for Easter Lunch, 6 adults and my 1year old grandson. Honestly, I just don't want to have the same meal we always have for Easter. I want leftovers so I am making way more than we need.


So I was thinking about BBQ chicken and babyback ribs not with BBQ sauce a more light herbier citrus sorta marinade, with all the fixin'

But I would like to make some changes and freshen them up, here's what I am leaning towards

Warm Brie' and crackers, or Really nice gourmet cheese and crackers, nuts, dried fruit sorta platter

Herbed Potatoes ( wedges) on the grill or Herbed cold potato salad
Oven roasted veggies or veggie skewers on the grill ( several types of squash, mushrooms, onions)
Fresh Green beans or Butter peas, with bacon or ham and onions.
Cold tomato orzo salad with feta or mozzarella
Deviled eggs (this is the one thing that I can not change or there will be problems)

Blueberry lemon pound cake, with ice cream
Chocolate something.. I haven't decided on what yet

So what are you having for Easter?

normally we do-

grilled leg of lamb
honey/butter sugar peas and carrots
au gratin potatoes
some type of salad
small honey baked ham (for the non lamb eaters).

this year? not sure. we're going away for a few days right after easter so we may opt to just do the ham but I'm very tempted to take the left over ham, half a leg of lamb inside a marinade bag along with some rye bread, ciabatta rolls, greek olive/feta tapenade and tzatziki sauce to the place we are staying (it has a full kitchen and cooking the lamb is super easy). we REALY enjoy the leftovers more than the main meal.

Your meal sounds great! We are going out of town to visit my 95 year old mom; we are taking her out to eat. I have reservations at 1:00 so everyone can get an early start home. (I plan to cook her dinner at her home on Saturday night)
 
I think I'm going to grab a couple rotisserie chickens from the store, maked mashed potatoes and roasted veggies. Dessert will be pies from a local bakery. I don't feel like cooking this year.
 
Brunch at my house. I'll make French toast casserole (a recipe I got from the dis years ago), sausage rolls, ham, salad, rolls and carrot cake. Then whatever my siblings bring and all buffet style.
 
I make a risotto (traditional style) every year for either lunch or dinner - it's a one time a year dish I put the love in:)...
 
We always had/have ham, pinto beans and potato salad. Or brisket with the same basic sides. We are simple folk :) Though my girls now make me fix broccoli salad and/or pea salad. They aren't big fans of potato salad.
 
We are doing a big breakfast this year with my family. Church get over by 10:40 so it's a little early to go straight to my moms for lunch so she decided we would do a breakfast instead. It's also my birthday so she's going to make a cake that we'll eat a bit later.

This is pretty much my plan as well, the chickens, small honey ham, sides, and pre made desserts. This year St. Patrick's Day and Easter are colliding. I'll just be getting rid of the corn beef and cabbage smells, and the Easter bunny will be knocking at my door!
 
Easter has been so strange since my parents started staying in Florida over the winter and all my other aunts and uncles are also out of town. Now its just the grandchildren and our 81 year old grandma. The first year we didn't even realize it until we sat down and we just laughed. The bad thing is that we are pretty lousy at putting together a meal. I was going suggest we do homemade pizza (family thing) and caesar salad (gradma's fav) instead this year.
 
Gee I don't know what we're going to have! We get back from wdw the night before. We've been so busy planning the Disney vacation we haven't thought about it. I wonder if I will feel like making a ham...
 
I'm no help either. Easter lunch with our church family :thumbsup2

This year we are bring sandwiches, but there will be all sorts of food from sandwiches, sushi, fried chicken, many types pasta salads, chips, and yummy desserts of all types
 
We'll be having whatever they are serving at our resort in Punta Cana! It's Spring Break so we are enjoying the tropics!

We are going to Punta Cana for the 1st time later on in the year. We have been all over the Caribbean and this is our 1st time visiting the Dominican Republic. Maybe you will post a trip report when you get back. DH and I have pirates hearts, that sense of Adventure!!! Enjoy Easter dinner..
 
I have no idea what we're doing for Easter, since we haven't heard from the ILs. If we're stayign home I'll make dinner for my mom, stepdad and us (and maybe my bff). I'm thinking:

Ham (Easter tradition in my family)
Some type of potato
Salad (probably something a little fancier, I have a lot of ideas on Pinterest)
Honey-glazed carrots
Buns
Lemon Meringue pie (I'll make this even if we go to the ILs)
