Gee I don't know what we're going to have! We get back from wdw the night before. We've been so busy planning the Disney vacation we haven't thought about it. I wonder if I will feel like making a ham...
This happened to me a few years ago... right before we left (about a week) for the WDW, I realized that we would be getting home on Saturday afternoon. We were living in GA at the time, I was in a state of panic as we had plans with our Georgia Family which are some really good friends, none of us had immediate family so we called each other our Georgia Family. We all would go to church together sunrise service and we took turn hosting and of course it was my turn. So I decided to a more brunch menu. I baked a couple loafs of banana bread and blueberry bread, and some cranberry orange muffins and froze them, got a couple of the 18 packs of eggs some of which , I had my DD and SIL decorate & color, I also had them pick up the fruit for fruit platter, went grocery shopping I did get a small honey ham, and stuff for French toast casserole which I ended up deciding to make ahead a freeze as well, stuff of scallop potatoes in the crock pot. So the menu was
Messy omelets platter - 1) with ham, cheese, and some green onions - 2) spinach, cheese, tomatoes, onions

The other families all brought some other side dishes, pasta salad, meat and cheese platter & King Hawaiian rolls, and a gourmet cheese and cracker platter. I can't really remember everything.
I just took out what I had frozen to thaw in the frig, mixed up the scallop potatoes for the crock pot, set up my table for the food, got out the platters and other utensils, chopped up everything for the omelets on Saturday night. On Sunday morning, I took the scallop potato mixture and put in the crock pot, When I got home from church a quick change, put the ham in the oven, mixed up the messy omelets, put the fruit on a platter and when everyone arrived cooked the eggs.
