DH, 3 DD, and myself will be visiting in November. We have GAD vouchers for DH, DD 11, and myself. We need 3 day park tickets. Should we buy 2 day for us and 3 day for the other two DD or is there a cheaper way? I keep reading about GAD upgrades but don't know if this applies to our situation.

Those of you who have them should use your GAD vouchers to get the free ticket, and UPGRADE them to 3-day tickets. Assuming you don't need park hopping or other options, you'll pay a total of $140+tax each that way. If you paid separately for 2-day tickets, it would cost $156+tax. So you're saving $48 by upgrading them.

The only "situation" that should preclude upgrading is if your first day is on a block-out day where you can't get the 1-day ticket. In some other cases if you get a package deal it comes with tickets, but if you are making future trips you can pocket those tickets and still make use of the GAD tickets.
