Summer is a busy time for the parks so going during the week is important if you want to try and cut the wait times down. You can purchase the Express Passes which would give you express access once per ride but they can be pricey so it's best to wait so see if you need them. I would recommend getting there when the parks open and doing the bigger rides first. The crowds usually start showing up around 11am so try and do as much as you can early.

Early June, IMO, you'll see very moderate crowds. (I'd even say "light" but I don't want you to be mad at me if I'm wrong!)

I am the only person I know who actually LIKES to visit Florida in early June. Crowds are fine, everything is open, swimming is nice, etc.
When we were there this summer (peak time) we found the least busy days were Tuesday, Wednesday and Thursday.
We arrived at the parks for opening and it really wasnt's busy at all until about 11 am. By 1 pm the lines were getting really long so we usually left about that time and came back a night.

Great! We will be there the 3rd week of June, arriving Thursday and leaving Sunday. It's okay, we figure we'll take it easy, be in no hurry and have 3.5 days to see it all.
I figure we'll be there early, go back to the hotel to relax in the afternoon and then go back for the evening! I'm excited to be going, regardless of higher crowds.
We stayed off-site too. Just make sure you get there when the parks open. There really aren't any lines until about 11 am. The lines don't start to get long (ie an hour to an hour and half) until about 1-2 pm.
