Just got home and stuck a fork in mine and it was falling apart—I think it’s going to be good. Potatoes and carrots are still a bit hard though. They’ve only been in about 2 hours though. Hopefully they’ll be good in another hour and a half.

Ours was GREAT! THE BEST corned beef dinner we've done. The Costco difference. lol

Was up at 5:00 am to make a huge tray of Shepherd's Pie for dinner and then this afternoon we made 3 corned beefs, cabbage and a bunch of potatoes. Rye Bread with Kerry Gold butter and the Irish Soda Bread I made yesterday. It was a good meal!!

Ours was great too. Middle DD recently had her wisdom teeth out and wasn’t up for chewing yet, so only 3 of us eating. Plenty of leftovers for sandwiches another day.

Today is St George’s Day (the patron saint of England). Get those recipe books out. Yorkshire pudding, toad in the hole, treacle pudding….. ? I can’t wait to here how these have ‘travelled’ across the sea.

Not a fan of corned beef, in Ireland corned beef used to be more of a low quality processed deli meat back in the 80s - think worse than baloney.
You can get "traditional" corned beef and cabbage - mostly for the tourists - does not bother me in the least - its on most pub menus.
Also I would never boil the bacon other than to extract the salt from the meat before roasting it - I always roast it.

In the states you cant just walk into a local shop and get a bacon - even today - in most traditional pubs you cant get bacon and cabbage - people expect corned beef and cabbage - if you offered both you might be stuck with a lot of bacon at then end of the night.

I have to special order it from Tommy Maloneys - we probably make it about once a month.
Corned beef you can get everywhere - no problem.
I'm sure this is exactly the same reason the immigrants - from Ireland - found something similar that was inexpensive and available that started this tradition.

I can understand why people get frustrated as there is an attack on traditional foods all across Europe - but the fight of corned beef vs bacon in the states was lost long ago

I’m currently debating whether to cook our corned beef (we have two) in the crockpot or oven. I’ve done it both ways before. I’m leaning toward crockpot!

The archdiocese here in Chicago said no meat still. But nearby Rockford and Joliet dioceses said meat is fine by them. Those two are good marketers.

I prefer oven, but ours is broken at the moment. So we are doing crockpot. With two corned beef, I would say it's the perfect time for a taste test.

Sadly I won’t be getting any corned beef either and I would never have it boiled with cabbage as I hate cabbage !! Do love a corned beef sandwich !!
