Not even St. Nicholas to St. Nic?

BTW - My boss is from Northern Ireland (which, I KNOW, is not the same as Republic of Ireland) and I love some of her expression (and her interesting ways of cursing). Working in an International organization, it is interesting to see what translates across cultures and what doesn't. For the record, the Hokey Pokey does NOT. Neither does Polk-a-roo (but that is very regional).

No, or at least I haven’t heard it. We mainly still use Father Christmas, although Santa Claus is becoming popular and we hear the St Nick songs. I live within a few miles of a village called Saint Nicholas, which has a small primary school also called St Nicholas school and I have never heard either shortened.
 
I'm not a huge fan of cabbage, but it occurs to me that there may be a way to cook it such that is isn't just soggy, gooey stuff. This is one of those cases where I say "I don't really like _______" but if it were prepared by a top-notch chef it could be really tasty. Mushy cooked cabbage doesn't have a great deal of appeal to me.

The creamed sage cabbage at Raglan Road that comes with the "let there be no rush pork" is delicious. I've never had cabbage that tasted that good.
 

I put the corned beef in the crockpot at 7 AM with a couple of beers. Potatoes and carrots are ready to go—will add those later. No cabbage for the first time ever—I didn’t have any, didn’t get to the grocery store and I’d be the only one eating that part of it anyway.

I started at 8, carrots and potatoes waiting their turn, only doing 1/2 a cabbage since I end up throwing it out. Got my 4+ pound corned beef from Costco, there was no fat to cut off! Made my morning.

Do you buy the beef ready seasoned and marinated? In the U.K. we have to prepare it ourselves and saltpetre is quite troublesome to find.
 
I'm late, but I'm making batches of Irish Potatoes (the confection) today for my aunt, sister, and nephew today. I was supposed to get them to my sister a few days ago so she could take some to work today for their little office party but I never got to the store to buy the ingredients.

In the meantime, have some VERY authentic Irishmen doing a beautiful rendition of Danny Boy:

For AGES I was confused why people would buy small packages of potatoes at the checkouts near Philly, maybe 5 years ago I was introduced to the little bits of goodness ... it's a rouse so no-one eats them but those in the know LOL ;)

I got mine from Costco too and it was the leanest corned beef I have ever seen! I was shocked—flipped it twice thinking I was missing the fat. I have gotten mine it at Costco at least once or twice before and it was never this lean.

All ready to go, just sprinkle the seasoning packet on. $2.99 a pound at my grocery store (only one brand) with coupon (my Costco one was $4.65 a pound, but would’ve grabbed more if I had know it was all meat, no fat). Rinse and cook.

No, I am from another put upon, much maligned and sometimes even overlooked nation. 😉
 
We're celebrating on Saturday when my sons are available (they're adults and both live about an hour away)...so I have to wait a few more days for my deliciousness...
