slo’s MONDAY poll - Corned Beef & Cabbage

I got mine from Costco too and it was the leanest corned beef I have ever seen! I was shocked—flipped it twice thinking I was missing the fat. I have gotten mine it at Costco at least once or twice before and it was never this lean.

Same. I did the flipping, too.
It's in the crockpot now. I keep wondering if it will be tender since it's so lean. Time will tell!!

Just got home and stuck a fork in mine and it was falling apart—I think it’s going to be good. Potatoes and carrots are still a bit hard though. They’ve only been in about 2 hours though. Hopefully they’ll be good in another hour and a half.

I'm not a huge fan of cabbage, but it occurs to me that there may be a way to cook it such that is isn't just soggy, gooey stuff. This is one of those cases where I say "I don't really like _______" but if it were prepared by a top-notch chef it could be really tasty. Mushy cooked cabbage doesn't have a great deal of appeal to me.

My guess is that it’s been grossly over cooked when you’ve had it. It still has a soft texture. At least some parts of it but it shouldn’t be gooey

I think I’ve gotten the same ones at Costco in years past. Costco gets heart shaped ones around Valentines Day too. Kids liked them when they were little (and cute)

Just got home from our St. Patrick’s Day celebration to celebrate the wonderful life of my stepdad that passed away 7 years ago today. DD18 joined us for the first time and she got a green Sprite and we toasted our glasses to a wonderful man that would say to people, “God loves you and so do I.” Now, he is with God, no longer with Alzheimer’s, and is at peace. Until next year, when we will celebrate his life again
