I am making a fairly large amount of pickles. I am trying to find a way to slice the cukes in a food processor. I just bought a kitchen aid elite. I am not sure if this is the best processor. In order to use it I will have to order an optional blade because the 4mm is a bit too thin for me. It is also difficult to keep the cukes uprite so that I get slices across the cuke and not longways KWIM? Do you have a food processor that has worked well with you for this? Have you found a way to modify your processor?

I used a mandoline slicer, but even still the slices were too thin. For the thickness I like, I had to do it the old fashioned way, with a knife.

I Have a KFP 600 which is a Kitchen Aid food processor which I purchased around seven years ago. I have a 6 millimeter slicing disk. It works just fine for slicing cucumbers and just about anything else I want to slice. The trick is to place cukes, carrots, and so on upright in the feeding tube, in sufficient quantity so they remain upright without tilting but do not become stuck in the tube. Then maintain pressure on the food with the pusher until all are sliced. Reload and repeat. It may take some practice.

I tried the mandolin and it was ok. I sell shall quantities of artisan pickles. I will plY around with the kitchen aid and order the 6mm blade. The four is just a bit too thin. Keeping the cukes upright was the hard part.

I use a mandoline slicer for things like this. Mine has settings that go from really thin to at least 1/2" thick. That would be plenty thick for pickles for me.
