I am so disappointed that they are switching their menu. I hardly call this adventurous food. I think the problem is that they didn't open ADRs. I don't want more burgers, fries and pasta .
Based on a quick sampling of dining reviews that had Skipper Canteen in the title on here it seems to be pretty mixed between positive and negative. I did not do a statistical breakdown but seems 50/50
Did Rusty do one?

. NOTE1: We were not impressed by the quality of the food. It was if someone said, "If
were build a restaurant, they will eat." Well, we ate. We didn't truly relish the food, but
we spent money, which is what Disney wants. There is a nod to countries and areas which
are on the Jungle Cruise ride, but few instances where one can recognize the food of any
specific country due to its spices or preparation.
.
NOTE2: This review was done during the SOFT OPENING, so food quality and CM behavior may
change in the future. Contrary to what many had thought, or hoped, there are no alcohol drinks
at Skipper Canteen. At this review, lunch and dinner has the same 1-DDP Table Service menu. At this time, FP's and ADR's are not being taken. .
NOTE3: For a new eatery, I had thought the facility design would have more interesting and
food more unique. Although quite pleasant, there is little truly unique or fascinating. And,
even though the SERVERS continued Jungle Cruise gags, it isn't enough to warrant us going
back to the Canteen.
. NOTE4: I am still at a loss why the eatery is not called "Scupper's Canteen".
Wow - racist much? I'm sorry but many people from lots of other countries go to WDW so why should everything served be dumbed down, Americanized food that you can get at any other restaurant. The real reason they are having so many problems is that they don't take ADRs or TIW. Disney essentially forces everyone to plan months in advance, charges a penalty if you cancel too soon before your reservation, and then expects people to take their chances that they will get a table. Not gonna happen.
Tiffins is going to be an entirely different restaurant in an entirely different park with a totally different audience...doesn't make sense to test a signature restaurant at AK with a regular restaurant in MK. I think they really believed the theme would carry the day with the food. But it hasn't.
I think the macaroni and freedom poster was being sarcastic.
DARN, I really liked the ill named "Skipper's Mac and Cheese" that was really pastitsio. It was delicious. I was hoping it was going to be more of a get rid of dishes that don't sell and add in some blander choices.
I am glad I got to try it earlier this month on a brief solo trip. I really enjoyed the Skippers Mac and Cheese. I liked not having to get an ADR for a change. I wasn't sure when I was going to be hungry and could get a time for when I was.

It's a theoretical. Don't use the present tense until it happens.
The DPB just posted a big thing highlighting the current menu. I sort of think that's a sign that it won't quite change as much as people think, if it changes at all.

Well many places are reporting it so there must be some credibility to it. I hope you are right and then maybe they add a burger to it and leave the rest alone.

My wife and I ate there for the first time last Week and really enjoyed our meals. We shared the S.E.A. Shu Mai - A legendary blend of Pork, Shrimp, Mung Beans, and Spices wrapped in Gyoza Skin then steamed for $10.00 and thought it was really good. I had the Grilled lambchops that I really liked and my wife had the Skip's mac and cheese which she said was just ok. I love the fact that there is so many different things on the menu here to choose from that are not found anywhere else in the park. The night we were there there was not an empty table in the restaurant.
