The studios does.You won;t see night shows like disney does though..Unlike Disney, universal is located very very close to a residential area.There are noise ordinances etc that need to be followed
That schedule is confusing- you can make dining reservations on nights when the UO website states there are no shows?!? Specifically Sept 6-7, 11-12, & 18. None of those are my night but it has me wondering about the accuracy of this calendar.

If they are offering dining pkgs on those nights, they must be having the show ..at least I think so.The 6th and 7th is Rock the Universe at the studios not sure about those dates, but there doesnt seem to be anything else for those others.

That's what I thought as well. Maybe they'll add shows the next time they update the show page. I just found it odd that the info seems conflicting on two different pages within the official website. And I guess I was holding out hope that there might be a show on the 24th despite dining not being offered.

September 6 & 7 is Rock The Universe but I don't know why they will let you make reservations when the park closes to the day guests at 6PM. You have to have a ticket to RTU to stay past 6PM. Not sure about the other dates.

The waterfall screen are in the Universal lagoon and you can watch it from anywhere around the lagoon.
there is a dinner package that allows you a dinner anytime that day, and the right to return to watch the show on their back dock area.
you can reserve and pay for the dinner package at Lombards in advance online.
