We are planning a visit arriving Thursday, November 1st and checking out Saturday, November 10th. Tried booking right at the 7th month mark but due to limited availability I am currently on a waitlist for a 2 bedroom at Cooper Creek beginning Nov 1st for 4 nights and a 2nd waitlist for 2 nights at the end of our stay (Thursday & Friday) @ GFV lake view. Have never waitlisted before so I was hoping others who have could provide some insight based on their experience - is this a possibility or should I not get my hopes up?

Anything could happen if DVC declares more villas at CCV. There are 56 dedicated and 36 lock-off 2-bedroom villas at CCV but not all of them have been declared yet. You will be competing with CCV owners who may have waitlisted for the same dates and a 4-night wait list has less of a chance of being filled than one or two nights.

VGF is another story. It's a small resort with very few villas (only 17 lake view lock-offs and 17 dedicated 2-bedroom villas). You most likely have VGF owners ahead of you on the wait list with a lot of those lock-offs being snapped up to book the studio half.

TBH, your chances are better at one of the larger resorts like SSR, AKV Kidani or OKW. You could always book the dates that are available at any of those resorts and then wait list the holes.
 
Also, given that those dates include Jersey Week and the half marathon, I would not have high hopes.
 
Do you have anything, or only waitlists? Because of Jersey week particularly, I would book something if I really wanted to be there then.
 

I agree, your odds are slim. I also have wait lists for the 8th- 10th, but snagged an AKV reservation as a backup. I made the reservation two days early with an extra couple days on the front (since cancelled) and it is a good thing, because everywhere except SSR was booked at 7 months. I have never seen such a popular time - Jersey Week, Food and Wine, and Veteran’s Day weekend. I check several times a day and nothing has opened up yet. I do hope you have a backup reservation somewhere! I was shocked even OKW wasn’t available at 7 months!
 
I do have a contingency plan. Actually have a reservation for SSR checking in on Thursday 11/01 checking out on Monday 11/05 and checking into VGF. Then checking out on Thursday 11/08 returning to SSR for the last 2 nights (11/8 & 11/9). I am really hoping that my waitlist for the last 2 nights at the VGF comes through as it would negate the need to switch hotels three times during one stay. I did extend my waitlist to 7 days prior to arrival in hopes that it would increase my odds.

With this many changes I’m liable to get on the wrong bus after a long day at the parks - where I will likely be standing in long lines with lots of DVC members from New Jersey.
