By backsplash I assume you mean the 4 or 5 inch high piece that goes up the wall? But then there is the rest of the wall between the top of that piece and the bottom of the cabinet that you are concerned about. A 4 inch granite backsplash would be nice, with something on top of it to cover the rest of the wall between the backsplash and the cabinets. I think doing granite all the way up the wall would be pretty $$$$, no?
I think tile would look good...just get a tile that enhances or blends with the color of the granite. Take a look at Am I There Yet's p[ictures. My guess is that there are some beige colored flecks in that granite, so the beige colored wall tile picks up on that.
Another thought...we have just redone a shower with stuff called Swanstone. It is similar to Corian, and it comes in thinner sheets that are smooth and can be put on a wall...we used it for our shower walls. We got white, but I would assume that it is avaialable in other colors as well. Perhaps look at it as another option...smooth, minimal seams, no grout, easy to keep clean.
