Retail inventory tracking isn't perfect. There can be any number of reason why physical inventory differs from computer inventory. Every merchant in the world that has an inventory database is going to have differences between actual & computer inventory.
Ha! Some ex-coworkers of mine went to a startup where they developed a system to monitor beer inventory in bars (the kegs) You but the kegs on special sensor pallets and the computer tracks the weight of each and then notifies the management when beer is running low as well as tracks the "beer flow" as the beer is poured/drawn from the kegs.
I know there's active development in trying to apply technology to regular store inventory too (RFID tags and the like)
