Share your Lenten non-meat Friday recipes?

I was just wondering if anyone fixes any special Friday dishes during Lent and would not mind sharing the recipes. I'll go first. This one does not entail much of a sacrifice for giving up meat.


Barbecued shrimp

3 1/2-4 1/2 pounds medium-large shrimp
1/4 cup Lea & Perrins's worcestershire sauce
1/3 cup olive oil
1/2 cup melted butter
1/2 tsp celery salt
1 tsp thyme
1 tsp black pepper
1 tsp cayenne pepper
2 tsp garlic salt
1 tsp chili powder
1 Tablespoon salt
2 lemons squeezed

I do some subsstitutions that I have found enhance it. I use chopped garlic rather than garlic salt. I use little to no additional salt. I also put about 2 large onions cut in thin slices. I also usually slice the lemons the same way.

Wash, and devein and dehead shrimp, drain (I'll leave them on if they are super fresh-it seems to cook the seasonings in the juices better). Pur ingredients above over shrimp in a large deep pan. Cook for 15-20 minutes at 350 degrees; open oven every 5 minutes and stir gently. Serve right out of oven with french bread. Serves 4.

A version of this dish is one of the signature dishes at several New Orleans landmark restaurants, Pascal Manales and Moscas in Waggaman (across the river from N. O. on the west bank).

I personally think this is too much for 4 people, depending what else you serve.

Sounds yummy! We just do simple things.....
Burritos with refried beans
Fish and chips from frozen to the over
cheese lasagna
cheese and vegetable pizza
spaghetti (no meatballs)

I too am always looking for recipes.
 
We usually do pizza on Fridays (always not just during Lent). But on Ash Wednesday or every once in a while I'll make spaghetti with tuna sauce. I make my spaghetti sauce the same way as always just substitute two cans of tuna (water packed, drained) for the meatballs and sausage. Kids love it.
 
I buy some catfish chunks in the seafood section, and maybe some scallops if they are reasonable. I melt a couple tablespoons of butter in a skillet and add a tablespoon of garlic, then the seafood. Add fresh chopped parsley and saute until the seafood is done. Toss in some cooked linguini and then serve with parmesan cheese. You can also use shrimp, although I'm allergic so I don't. It is quick, easy and really good!
 

We usually do simple things like cheese pizza, pasta or grilled cheese and tomato soup. Sometimes we'll have white fish too. DH would love the shrimp recipe!
 
pepper and egg sandwiches every Friday during lent


fry Green peppers (cut up in slices) in skillet w/ oil
add 1 clove garlic
salt
pepper
oregeno
1/4 cup of spaghetti sauce

6-8 eggs in a bowl and mix them
add to skillet,
scramble


serve on crusty french bread - (add hot gardiniera too!)
 
One of the dishes I make is salmon. My family loves Salmon.

4 Fresh Salmon steaks (one for each of us)
"I can't believe it's not butte" Spray ~ a few squirts.
Montreal's Spicy Steak Seasoning

I rinse the salmon & pat dry. Place on foil lined toaster oven pan. Squirt maybe 3 squirts per each piece of fish. Sprinkle some Montreal Spicy Steak Seasoning on each piece & bake for 10 mins at 350. Then I set the toaster oven to broil & leave it in another 10 mins. YUMMY!!!

My 4 y/o didn't like the spicy blend so I either use the regular (non spicy) Montreal's steak seasoning or I use a new mix of seasoning I bought at Sam's Club called "Citrus Grilled Seasonings." He likes that better. My 10 y/o wants spicy all the way. :thumbsup2
 
Ooo that shrimp recipe sounds good. Will definitely give it a try!

We often have the ol' standbys - homemade macaroni and cheese, and tuna casserole with broken chips on top.

And we love salmon too. One favorite is Market Day's seasoned salmon, but a favorite homemade recipe is as follows...

Salmon Pesto
4-6 salmon fillets
2 Tbsp. Mayo or Miracle whip
2 Tbsp. Pesto (from jar, or refrigerated section, or use a packet mix,prepared)
2 Tbsp. breadcrumbs
2 Tbsp. Parmesan cheese

Mix pesto and mayo, set aside. Mix crumbs and cheese, set aside.

Bake salmon filet's at 400 for 15-20 minutes. Turn oven to broil. Spread mayo mixture on top of filet's, then sprinkle with crumb mixture. Broil for 1-2 minutes.

Very rich and delicious, but it's so easy, and it's salmon which is healthy right?

On Firdays during Lent we will have either egg salad sandwiches, pizza, meatless spaghetti, grilled cheese, or crabcakes. Your shrimp recipe does sound great.
 
I don't eat fish/seafood of any kind so we have grilled cheese/tomato soup, cheese pizza, spaghetti with plain sauce (no meat added), mac-n-cheese.
 
cheese tortilini/ravoli with sauce
grilled cheese
pizza
seafood
omlettes/quiche/frittata(sp)
refried beans for burritos, tostadas, nachos
soups
grilled portobello mushroom sandwhiches
red beans and rice
chili mac with no meat just beef up lots of chopped veggies and beans
stir fry veggies and rice
pancakes/waffles
 
Thanks for the salmon ideas. Also, the catfish and scallops recipe would be a big hit around this joint.

I also am gonna try the portobella sandwich and try to dig out my long lost quiche recipes.

I knew you guys would have some great ideas.

Anyone have a good crabcake recipe? I love those things, but the fozen kind stink when you have had the real deal.
