I been on a health kick lately with lots of salads. What is your favorite salad that you make.
Mine is

Spinach
Spring mix
Carrots
Blue cheese(I know not healthy)
Grapes
Blue berries
Strawberries
 
I've been enjoying the Taylor Farms Sweet Kale salad sold at Costco in large bags (smaller bags in other grocery stores). Lots of crunch (kale, shredded brussel sprouts) with dried cranberries and pumpkin seeds.

There's nothing wrong with a little blue cheese. I've read that have a small amount of fat on your salad (either from oil, avocados, or a cheese) helps the absorption of the other nutrients.
 
I love salads. I like using a green (romaine, arugula, spinach, maybe some watercress), a nut (almonds, walnuts, pine nuts), a fruit (strawberries, grapes, oranges), and a cheese (Parmesan, feta, blue). Sometimes some cucumbers, red onion, olives, avocado... I like olive oil with different types of vinegar, or fresh lemon juice.
 
We use our meat leftovers in salads. Chicken, steak, ham etc. Add spinach and romaine, celery, carrots, green pepper, grape tomatoes, onions, shredded cheddar. We'll have that a couple times a week.
 

Depends on how you define healthy. I eat low carb so that blue cheese is perfectly healthy in my diet.

My favorite salad is
Spring mix
gorgonzola
grilled steak
just a few walnuts
balsamic vinegar & olive oil


I also just love a tossed salad with spinach and hard boiled egg added

In the spring and summer salads are my staple. I make what my honey calls the kitchen sink salad in a big ole mixing bowl. Mixed greens with arugula, grilled chicken, grape tomatoes, either avocado or guac (if I use guac I don't use dressing) apple, dried cranberries, some sort of goat cheese, garlic salt and if I'm using dressing raspberry vinigerette. Takes me twice as long to fix my salad as it does him to fry whatever he is frying that night (southern must eat fried food) I love Wendy's cranberry/apple/chicken salad, I usually only get the half one since they are so huge.
 
Love my salads also - a favorite mix of mine - a summer staple -

Spinach
Romaine or Spring mix
Feta crumbles (seasoned)
Cranberries
Walnuts or honey sliced almonds
Sunflower seeds
Raspberry Vinaigrette Dressing
 
My favorite "super food" salad - massage kale with raspberry or pomegranate vinaigrette, add cashews, edamame, sunflower seeds, blueberries and dried cranberries. Love this so much.
 
SPINACH LEAF SALAD

20 oz pkg of fresh baby spinach leaves

4-6 oz fresh mushrooms, sliced

1/2 lb Bacon (8 slices), cooked and crumbled*

1/4 lb Swiss Cheese, grated

1/3 red onion, diced

6 boiled eggs, sliced


DRESSING:

Combine in blender:

1 c salad oil

1/3 c rice vinegar

3/4 c brown sugar

1 T dry mustard

1/2 tsp salt

1 T red onion (a slice from the salad)

1 T poppy seeds



*You can crumble the bacon in the blender with the dressing.

Just before serving, pour dressing over salad, and toss.

Dried cranberry
Apple (optional)
Sliced almond (brown them with butter - subtracts from health but adds to yum)
Raspberry vinaigrette
 
I like a lot of these. My favorite is spinach, sliced almonds, dried cranberries, chopped egg, red onion, Parmesan, crumbled or cubed cheese, garlic croutons, and mandarin oranges and blueberries, with a vinaigrette dressing, Yum.
