September WISH thread…here’s to a fabulous fall

This is pretty accurate!! Except I don’t watch hallmark movies lol! I do watch Hocus Pocus and The Haunted Mansion multiple times a season!!

Had a good weekend so far! Crazy busy but good!


Went to the DNV with DD yesterday for her permit test…a hour of waiting in line she finally got to take her test and unfortunately she failed. Got my niece for the day and her and I took my youngest dog to tractor supply for the mobile vet clinic, she needed a booster to get boarded in a couple weeks. The van with the vaccines was caught in traffic and was a HOUR late. People and pets were pretty miserable at this point but luckily we were 2nd in line so once the van got there we were in and out! It was so nice here my niece and I walked to the park after dinner and she was able to play with some other kids and had a great time.

Today we were back at the DNV to retry the test and after 1.5 hours in line she passed!!! HOORAY!!!! I am so happy for her. Went to the shelter right after and walked…5 miles and 14k steps 🥵 but the weather was nice and I needed it!! Resting the rest of the evening and church tomorrow ☺️

Weather was disgusting today which made the trip to get my nails done less than fun. And def did something to my back so I’ll have to skip barre this week. But did make a yummy butternut squash Mac and cheese that looks like it will result in an least a few lunches 😊
 

I ended up with a very nice weekend. We went to our company's overnight outing. The hotel we stayed in was right across the street from the stadium. The entire hotel was baseball themed, which I loved!

DS drove over and we met our DDs who both live near where we were for brunch at a new place today. It was interesting - great food, super outdated interior, but it was fun! Afterwards, we drove to a place that has a little 2.2 mile trolley and rode it round trip and ended the afternoon with rolled ice cream. It was just fun to all be together and I was happy that they were able to spend the time!

Also, on our way to the game yesterday, we went by a local shoe store and I got fitted for tennis shoes. It's been a long time since I've had a pair that fit well and didn't hurt my feet. I'm looking forward to trying these out. Hopefully tomorrow after work, I'll give them a trial run!
 
I finally feel like myself again and it is so nice. I still have the cough but I don't feel like I need to stay on the couch and rest. I went grocery shopping for the first time in a month! I went to the game Friday night and went and got pictures of DD and her friends for Homecoming. It is so nice to feel back to normal. We though DH had avoided all of the ick in this house but he started to get sick this weekend and has a fever today. It seems to be what DS had that I got as well. It doesn't seem to be whooping cough which is good. He should be feeling better in a few days.

After this week, we finally have a break in dr. appointments for DD. She saw immunology today and will see the hematologist on Friday. After that it is just speech therapy, which I don't have to go to. The Immunologist is doing a bunch of blood work to check other immune stuff. They just want to make sure she isn't low or deficient in anything else other. They are also testing her for walking pneumonia. She doesn't think this is it but I guess there was an up tick in this as well in July an August and a cough can linger with that too. It wouldn't change anything that we have done or doing it is more just to know. We all still think we had whooping cough though. They also did an allergy test and she is not allergic to anything and didn't even have really have a reaction to the control test. So all good things. Friday will be super easy as we just need to get a plan in place for when DD has her wisdom teeth out in December.
 
My small steps this week and getting back to walking. Saturday, I bought a new pair of tennis shoes because I really didn't have a good pair to walk in that didn't hurt my feet. It's been raining all day today though, so I'm hoping it will clear up after work.
 
London is being its own lovely busy self. The hotel and location are perfect, weather has been good. I’ve enjoyed everything but the highlights have been shopping at the Skin Rocks counter and getting my haircut. What a treat! She did just what I asked and cut to the peculiarities of my hair (lots of cowlicks). It made me realize how not good my cuts have been, so I’ll definitely be changing hairdressers when I get back.

I have my last afternoon tea today, the fanciest one. I won’t need any more carbs for the next month. The train to Edinburgh is at 10:30a tomorrow, really looking forward to it.
 
I don't know if i have any fall recipes. I despise pumpkin and dislike squash and I do not like cooked apples. As it gets colder I do make semi-homemade spaghetti sauce. It has been passed down from my grandmother. It is tomato juice, tomato puree, I also use tomato paste (my grandma and mom did not), water, onion, garlic, parsley, oregano and basil. I make meatballs (I use ground beef and ground Italian sausage), and pork chops some times (depends on my mood). Nothing has any measurements. You let that simmer all day. If I don't put the sausage in the meatballs then I just add the links to the sauce.
 
Hello!!! Catching up from Monday-small step is to get back into my routine of 520am wake-up/Bible reading and journaling/30 minutes of yoga before work starts. I was out of my routine last week due to being under the weather but this week I am back into it! Going well so far and I have been doing this since April successfully so I need to keep on with it.

For my fall recipe I am going to share my white chicken chili…it’s delicious-but don’t take my word for it-I won my office chili cookoff 3 years in a row, only covid/remote work hit then obviously no more contests-but my family still loves it!

1 lb chicken breast chopped
1 lb bacon cut up
1 yellow onion diced
3 cloves minced garlic
3 jalapeño peppers, seeds removed and diced
1 can corn drained
1 can white beans drained and rinsed
1 can petite diced tomatoes not drained
1 teaspoon cumin
1 teaspoon oregeno
1 teaspoon smoked paprika
2 teaspoons chili powder
Salt and pepper to your liking
1.5 cups chicken stock
1 brick of 8oz cream cheese


-cook the pound of chopped bacon in a big soap pot until crispy, remove from pan but allow the bacon grease to remain in the pan
-add onion, chicken and jalapeños to the bacon grease. Add all spices and salt and pepper. Cook until onions are translucent
-add chicken stock, corn, tomatoes and beans and simmer uncovered for 30 minutes
-remove from heat and add in the cream cheese, stirring to combine

I serve this with shredded cheddar, sour cream, guacamole and crushed Doritos on top!!
 
For today’s topic Tuesday I thought a seasonal recipe exchange might be fun! Share those pumpkin, squash, apple etc recipes with the group!

My favorite pumpkin recipe comes from a playgroup we were in back when DS was very little. One of the kids had an egg allergy, so I used to make these for days I was hosting:

I used to alter it a little by subbing brown sugar for some of the white, oats for some of the flour, and using the miniature chocolate chips (plus sometimes chopped walnuts).

And they don't really spread out while baking.
 
Woohoo… I’m on the train to Edinburgh. This is the first time during the trip that I’ve gotten the anticipation tingles. I’m having a pub dinner this evening, desperately need some protein and veg. Tomorrow it is up early for the tour to Loch Ness. Then the group meets up Friday morning. I am ready to be out of London and with people, so the timing is perfect.
