SB Phase I quick breakfasts?

OK. I admit it, I am a slouch. The whole idea of getting up and cooking eggs in the morning doesn't fly (unless it is a weekend)

So... I made some of those veggie quiche things in the book. YUCK!!

I need some suggestions for breakfast.

Anybody made the veggie things with broccoli? The spinach is my real problem.

Plus I have to go out of town next week and for at least the first few days I will still be in phase I.

Hi Carol,

I wasn't thrilled with those breakfast quiche cups either until I doctored them up. I crumbled pieces of bacon into the mixture before baking and that made all the difference in the world. I don't see why you couldn't use any type of breakfast meat you wanted: canadian bacon or something like that. I do eat regular bacon and sausage on SBD so I may not be the best person to get advice from.

Also, I saw a recipe for canadian bacon or smoked ham cups where you use the piece of breakfast meat and fold it into the muffin tin cup and then pour your egg and cheese mixture into it before baking. It sounds good but I've never tried it.

Anyway, I hope one of these suggestions helps!
