With the opening of the new Mexican restaurant in EPCOT later this year, will the existing San Angel Inn in the Mexico pavilion be closing?

No they just redid the existing outdoor CS restaurant.

No, it will not. Mexico will have two restaurants (one inside the pavilion itself, one across from the pavilion beside the lagoon) and a tequila bar.
