Salted Caramel Cupcakes

At Christmas, we always make saltines and ritz dipped in white chocolate. if we want to get really fancy, we buy the ritz bitz that have peanut butter in the middle and dip those in white chocolate and refrigerate til they have hardened. So I can vouch for the whole salty/sweet thing.
 
One more quick for the really really lazy wanting the chocolate/salty fix-
spray cookie sheet with pam

Package of Rolos-
a bag of pretzels(I like to use the little square ones-

Take pretzel put Rollo on top

make a bunch-

Put in oven for about 8 minutes until rollo starts to melt-

Top immediately with another pretzel- Little pretzel Rollo bites.

mmmm Great movie snack.

I have been to Wegmans, Target, and Walmart and CANNOT find the squirt bottle or the Skor bars. I have one more Walmart I can get to and then I don't know what I'm going to do.

I actually don't mind skipping the Skor bars because my son would want to eat these and he has a peanut allergy so if I don't have the candy on top, no big deal. But I think I need the squirt bottle.

I bet I could probaby get one at a beauty supply store.

Instead of skor you can use Heath bar or a symphony bar , I usually have better luck finding the mini versions of the bar in the bag candy aisle.

Check dollar tree for squeeze bottle.
 

I would love to try it, but I don't trust myself to make it... I had a bad experience with red velvet cake once. Maybe one of the bakeries around here makes Salted caramel cupcakes.

I got a set of squeeze bottles at our local junky dollar store. They came in a pack of two-one red, one yellow. They are meant to be used for ketchup and mustard. Hopefully they will work.

Also, maybe Party City/Joann's/AC Moore or any other craft store might have squeeze bottles in the candy making area.
 
Hey OP (and other posters too:) ):

I made this recipe, with a modification, for a work potluck and people LOVED it!! Had many people ask for the recipe.

I was too lazy to make cupcakes :rotfl: so instead I made the chocolate cake in a 9x13 pan, and then while the cake was still warm poked holes all over with a fork, like I would if I was making a jello cake. I then poured a heated caramel and sea salt mixture over the top of the cake, then frosted with Cool Whip and drizzled caramel/salt mixture over top again with Heath Bar. YUMMO!!!! :thumbsup2 I will for sure be making this again - VERY easy and people loved it. More than one person made a comment about the taste and when I said there was salt in the caramel, they were surprised.

Anyway, just wanted to pass that modification along to anyone that was interested. Have a great Labor Day weekend, all!! :banana:
 
Oh those sound like something right up my alley!

Quick question though, I have to go out of town on thursday and I was wondering if those cupcakes travel well? They can be refrigerated until I get in the car. I just know so many people would enjoy these.

CANNOT find the squirt bottle

In the housewares department with all the little "doodads" like measuring cups, salt shakers, potato peelers, they should have mustard/ketchup squirt bottles for picnics and such. That's what I used, and it worked like a charm! :thumbsup2
 
Thanks for sharing this recipe! I love making cupcakes with something in the middle! I tried the cookie-dough cupcakes from the allrecipes site recently and they were awesome!
 
Georgetown Cupcake makes this flavor but I haven't had it yet and am dying to try it. Maybe I will make my own.

I LOVE Georgetown Cupcakes. I volunteered at Chef's Best this year and got go eat my fill of the cupcakes--I filled up on the cupcakes and almost didn't have any room left for "real" food. I haven't made it to one of their stores yet.

More love for Georgetown Cupcakes! My DD lives right across from Georgetown and everytime I go visit, it is our first stop. I never had the salted caramel cupcake, my fav is the lemon berry!
 
These cupcakes sound delicious. I remember watching Ina Garten ("The Barefoot Contessa") make caramel candies using sea salt in the recipe. The candies were called "Fleur de Sel Caramels". Fleur de sel is sea salt in French.
 
These are good, but next time I will use more caramel... the chocolate overwhelmed the caramel a bit.

Instead of using Heath or Skor bars, I just bought a bag of the Heath Toffee Bits. They also have the chocolate covered bits too. :thumbsup2
 
Good gracious! I *finally* found the squirt bottle. I went to Bed, Bath, and Beyond (I had to get Space Bags), Michael's and the Dollar store. NOTHING. I walked over to some beauty supply store for black hair care. I'm sure they were wondering what the heck I was doing in there with my pasty white self!:lmao: I did find a smaller squirt bottle for $1.99.

So tomorrow, I'm making these.

I decided not to use candy on top since I can't find Skor bars and don't really want to put another other candy on top (it doesn't really appeal to me). So I will frost them and then take some leftover caramel sauce and drizzle on top and add a pinch of salt over it.
 
You should try saltine toffee (though it is very sweet).

Line a baking sheet with tin foil and grease it. Then line with saltine crackers (you can use broken ones to fill the edges).

Melt 1/2 cup (1/4 pound or 1 stick) of butter on the stove and add 1 cup packed brown sugar. Bring to boil and allow to boil for about a minute (various recipes give different boiling times - some say to stop once it gets to the boil).

Pour the butter/sugar mixtures over the crackers and spread it out (don't worry if there are some gaps as the toffee will spread in the oven).

Cook at 350 degrees for about 5 minutes until the toffee is bubbly all over.

Pull out of oven and top with 2 cups of chocolate chips. Allow them to sit for a minute and then spread the melting chocolate over the toffee.

At this point, you can sprinkle with Skor bits or broken crackers or sea salt or ....

Allow to cool in fridge and then break into pieces and enjoy.

I love these, but haven't made them in years :)
