Peter Pan, because it has a cool queue that you'll miss if you FP it. Also, Big Thunder, Splash Mountain & Pirates are rides we typically hit during the first hour, rather than use FP for them.
Everest, Space, 7DMT, RnRC, TSMM, Big Thunder, Soarin, Test Track, Safari. That being said, with the exception of Safari, we also do FP for all of these for later on a different day. We EMH/RD, mid day break and then hop to a different park after 4 pm.
If you are an adult, the only other is Haunted Mansion which has an "interactive queue" that may be of some fun and interest.
Any of the other WDW attractions' standby queues, even if they do have a few bits of fluff, are not worth the extra wait-time (if you are an adult,) if a FP is available.
Pooh and Dumbo have the most interesting "interactive queues" for kids.
And, MK's Little Mermaid and 7DMT offer kids a few diversions... but even then, nothing that will really be "missed" if a FP can be had.
Wow, thank you, everyone. TOT will only be my son and I so I was hoping to get that on the one and only HS rope drop I was doing. I have RnR coaster Fp planned because it will work for one of the days I use express.
If you like Toy Story Mania, I would do that first since you only get the one FP from Tier 1 that you will use for RnRC. ToT is Tier 2 so you can get both of those as FP, and do TSM at opening.

At MK we do SpaceMtn, Buzz and People Mover as walk ona , at AP we do the Safari first thing, at DHS we go for TSM first and at Epcot it's walk on Soarin'.
Magic Kingdom - Peter Pan's Flight is our first ride almost every time. We actually think it's a very mediocre ride, although the queue is super fun. Last year, though, we skipped it and did Jungle Cruise first. I think a lot of people had the same idea, and it did actually take a while to get through the line.
Epcot - Test Track for sure. Not a huge fan.
HS - Rockin' Roller Coaster. We love Tower of Terror and TSMM too much to not get FastPass for them. For us, if we see a 30+ min. wait for RnRC, we skip it. It's fun but not a must-do for us anymore, especially as we come just about every year now.
