Just checked into hotel & looks like our trip from out of state will be over some of the most rain CA has seen a awhile.

Which rides shut down when it rains?

The Tea Cups and Alice in Wonderland for sure.

I know Radiator Springs Racers can be affected by rain. Screamin' will run in the rain, but it's not all that fun to ride it with the rain pelting that hard. Also, if it gets intensely stormy, outdoor rides that don't close for just mild rain may end up being affected.

The Golden Zephyr closes if it's too windy.

Parades are cancelled if it's raining or if the ground is still too wet for the safety of the performers.

Things I believe close more for wind than rain. // We rode Radiator Springs racers this past Thursday in the rain. It practically rained all day. They still had the World of Color show and a cast member told me rain doesn't close the WOC show, but wind can.

Bring Ponchos, one for your stroller too if you're bringing one. We went on a rainy December day a few years ago. The lines were super short as people just weren't out. Most people were wearing ponchos and stayed pretty dry. It was our last day, so we didn't feel like forking over the money for Disney ponchos. We were pretty good at staying dry until we went on Luigi's Tires (now closed).

Plan on riding inside rides and seeing shows when it's raining. Then take any chance when it breaks to hit the outdoor rides. There are quite a few indoor rides. And hey, hit up Splash or GRR on your way out of the park. At that point it doesn't matter if you get wet. Enjoy! The crowds will be nicer, even if the weather is miserable.

As figment_jii said, any ride with an outdoor portion can close. If it it's drizzling or starts raining lightly, it's best to prioritize things that are outdoors because they could close soon.

Ponchos are standard items for us in both Orlando and Anaheim. We buy disposable ponchos from a dollar store and keep one for each of us in our backpack, even if it's sunny with zero chance. Because in Orlando and Anaheim, Sunny with zero chance can change pretty quickly.
