Restaurants for Vegetarian

Hello. My girlfriend is a vegetarian....does anyone recommend any good places in Disney that would offer a good amount of choices for her? Thanks!

Just returned from our trip 6/22 to 7/2. My sister is a vegetarian and she thoroughly enjoyed eating at BOMA at Animal Kingdom Lodge.

DD is vegetarian and we've found most all counter service has vegetarian options and all table service restaurants are most accomodating for vegetarians. allears.net is a good source to see actual menus, etc...Have a wonderful time!
