The restaurants are open later during the EMH right?

Yes. Liberty Tree Tavern was open late at MK and SciFi was open late at MGM.

Be sure to have PS for restaurants at EMH parks. They were all full when we were there last week.

I hope you don't expect ALL of the resturaunts to be open during EMH (unless things have changed since January). When I went to MGM for EMH, the only counter serve resturaunts open were Backlot Express (closing 1 1/2 hours into EMH) and a couple down by RnR. Min and Bill's Dockside Diner was closed, Starring Rolls Bakery, ABC Commissary, Pizza Planet, and Writer's Stop were closed. At MK, Columbia Harbour House, Pinocchio's Village House, Enchanted Grove, Mrs. Pott's Cupboard-all closed. And Casey's, I think, closed after 1 1/2 hours.

I am not worried about quick service places (except at the animal kingdom)

When we went last May when we were in Epcot we were starving at about 10:30 and hardly anything was open (we were hoping for a sit down meal as we rarely do counter service) so we ate pretzels and popcorn from a stand. Unless something's changed since then not much was open.
