Creamed Corn Spoon Bread

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 cups cornmeal
1 cup buttermilk
8 tablespoons sugar
1 1/2 cups corn -- frozen
2 tablespoons baking powder
1 cup milk
1 teaspoon salt
1/4 cup butter

Add dry ingredients to liquid and mix together until well blended.
Pour into well greased pan (9” x 13”), place in steamer and cook for 15 to 20 minutes.
Top with creamed corn and serve.
NOTE: If you do not have a steamer, use a double broiler. Still cook for 15 to 20 minutes
 
I've never eaten there, but those recipes sound good. I might have to make the spoon bread. I've always wanted to try that. I really don't spend a lot of time at the Studios, I ride Star Tours, the Great Movie Ride & maybe see a show or two & usually leave the park.
 

Same here. If we eat a sit down meal at HS I prefer other places. I have read too many bad reviews. ;) Although I stayed away from Nine Dragons for years because of bad reviews. However we have eaten there several times and never had bad food or service.
But buffets and kids kinda give me the heebie jeebies. All you have to do is watch for a bit and you will swear off buffets for a long time. :laughing:
If I go to a buffet when they first open I don't feel so uncomfortable.
 
Here's a recipe I have that reminds me of the corn recipe above:

Creamed Scalloped Corn

1 cup sour cream
1 can drained whole corn
1 can creamed corn
1 box Jiffy corn muffin mix
1 stick of melted butter (cooled)
2 eggs
swiss cheese

Mix all but the cheese together and pour into a baking dish. Top with slices of swiss cheese. Bake at 350 degrees for 40 - 45 minutes.


Super simple and always a hit. I have a round stoneware dish I bake mine in.
 
I've never eaten there either.....have never heard good reviews about it.

Same with me ladies........
Hopefully they will turn things around, it's in such a nice spot in the studios.

I don't know the schedule at H&V. But between F! dinner packages, character meals, and unsuspecting vacationers, they probably don't have to do anything to improve the food. ;)
That being said it may be wonderful food and I just do not know as I have never eaten there.
 
True, I am sure F! keeps them full.
I have only heard a couple people say they liked it.....too many other places at DHS I would rather eat at. Can't see going there ever.

Lynne - you must be the only one! I've never eaten there either!! Something about it has just never attracted my family - maybe it was the menu, it's been so long since we even considered it!
Now I'm going to have to go look up the menu and see what it is now:rotfl:

Nope, you're NOT alone! We went there in October, because 50's messed up our ressies :sad2:, and we will actually go to H&V again before we ever go to 50s again! Food was great, hot, and there was a dessert there I'd Die for! Soooo yummy! Of course, before we hit H&V, we'll hit SciFi 1st! ;) We also did dinner, with no characters. Maybe that makes a difference? :confused3 When I booked ADRs for June, I avoided the character meals.

We 4 loved H&V! :thumbsup2
 
I've eaten there also, we did the F package a few years back, wanted to make sure we got a seat at the F show without having to stand in a long line. The food was good, but then again I'm not too picky and will eat almost anything. I would go again only if I'm planning on going to the F show. Not sure if I would reserve if I wasn't attending the show that evening.

Rainforest Cafe Rasta Pasta

Amount Measure Ingredient -- Preparation Method

8 ounces bowtie pasta
1 teaspoon chopped garlic
2 tablespoons olive oil
1 cup chopped fresh spinach
1 cup broccoli florets
1 medium red pepper -- roasted
1 cup grilled chicken -- sliced into 1/2" pieces
1 cup prepared Alfredo sauce
1/8 cup prepared basil pesto sauce
1 teaspoon Italian seasoning
2 tablespoons shredded Parmesan cheese

Cook pasta according to package directions. Drain well and set aside.
In a 10" saute pan, saute garlic in oil.
Add spinach, broccoli, red pepper and grilled chicken.
Toss to combine.
Stir in Alfredo and pesto sauces. Simmer for 5 minutes.
Reheat pasta if necessary.
Pour pasta into bowl and top with vegetable/sauce mixture.
Sprinkle with Italian seasoning and Parmesan cheese.

Rainforest Cafe Safari Soup

1 tablespoon olive oil
2 tablespoons vegetable oil
1 pound Italian sausage - casing removed -- lightly sauteed and drained
1 cup partly cooked pasta - any shape
4 medium garlic cloves -- crushed
1/3 cup diced onions
1 cup sliced carrots
1/2 cup chopped celery
3 cup diced eggplant - skinned (unless skins are
very thin and tender)
16 cup water
1 can crushed tomatoes -- (28 oz.)
1/3 cup mixed dried beans (Romano kidney, fava,
pinto, cranberry, etc.)
1 1/2 tablespoons salt -- to taste
2 tablespoons sugar -- to taste
1 teaspoon pepper
3/4 teaspoon garlic powder
1 bay leaf
1 teaspoon basil
1/4 teaspoon celery seed
2 tablespoons minced fresh parsley
2 tablespoons minced fresh coriander
1/4 teaspoon dry chile pepper
2 tablespoons balsamic vinegar

Lightly grease stock pot bottom to prevent beans from sticking.
Brown sausage and drain.
Saute or sweat vegetables (garlic, onions, carrots, celery, eggplant) in olive oil until softened.
Add water, sausage, tomatoes, salt, sugar, pepper, garlic powder, basil, celery seed, coriander, parsley, chile pepper, balsamic vinegar. Simmer 2 to 3 hours (until beans are soft). Adjust seasonings.
Add pasta a few minutes before serving.

Rainforest Cafe Caribo Coconut Chicken With Honey Mustard Sauce

1 1/2 pounds Chicken Breast, boneless, skinless -- 1/2" thick
2 teaspoons salt
2 teaspoons sugar
2 cups flaked coconut
1 cup corn starch
1/4 cup flour
2 eggs -- beaten
1/4 cup water
Deep fryer or deep skillet
Vegetable Oil (for deep frying)
Rainforst Cafe Honey Mustard Dressing
1/3 cup honey mustard
1/4 cup mayonnaise
1/4 teaspoon cayenne pepper

Trim chicken breast so the pieces will measure 4" long and about 2 1/2" wide.
Sprinkles sugar and salt over chicken breast and place in a zip lock bag and marinate in refrigerator for 4 hours.
When chicken breast are ready to be prepared, rinse lightly and drain.
Place coconut,corn starch, and flour in a bowl and mix well.
In separate bowl place beaten eggs and add water. Blend well.
Have oil hot and ready to fry chicken breast.
Dip chicken breast in egg wash and then place chicken breast in coconut mixture, coated well.
Carefully place chicken in hot oil and cook until lightly golden. Remove and place on a paper towel. When frying chicken do not crowd and keep a check on the oil so it does not burn.

Rainforest Cafe Honey Mustard Dressing: Mix mustard, mayonnaise and cayenne pepper together and blend well.
Place in a covered container and refrigerate until ready to use.
 
It's been years, so I can't help out. I don't remember the food as being bad--and the boys loved the animatronics. But we've done the DDP for the past few years, and it's not a Disney restaurant. I think if we were going to pick one now, tho, it'd be the TRex and not Rainforest.

Hopefully, I'll be back online more. The holidays, kid's vacation and then we hosted a Ukrainian hockey player for a week. Kept me busy! ;)
