Restaurant operating hours?

How late do the Restaurants stay open for dinner? We were thinking (it's our first trip ever to WDW) that we would wait til the end of the day at the parks to eat but didn't know how late that would be. Also, are most of the top places to eat, in the parks or at the resorts? Again, this is our first trip and I beg your indulgence if these are stupid questions.

We are late eaters anyway and we had a 3 hour time change so we often weren't hungary until late in the evening Florida time. We never went to bed hungary. We ate at MK at Casey's (hot dogs) even after the park was closed, they were still serving. I'm not sure about any other places, but that worked for us.

and the restaurants are divided by land, resort etc... so you can look at each one, usually the hours are there..
