Restaurant bookings at Universal - advice needed please!

Hi all
my family will be staying at HRH for a week in April following a week at AKL in WDW. I have ADRs done already for Disney and I was going to take things a bit easier at Universal and just eat where we felt like when we felt like it.
We've had a shock this week though as my DS (13) has been diagnosed with type 1 Diabetes. Our Doctor says DS should have very regular meal times so I would now prefer to make some bookings but don't know where to start for Universal .
If you can offer any help at all I would be most grateful.

There aren't many restaurants that take ressies this far in advance. I know Emerils will and there is another, but I can't recall the name right now.

Usually you can make them the day before or morning of.... If you're an 'earlier' eater, you'll be fine.... If you're a 'later' eater, check into ressies. Also, your room key will bump you up ahead of the line at most restaurants

You really don't need to worry about this at US. As said before, your FOTL card also works at most resturants. (Not the really popular ones.) During our RPR stay, we truely walked into any resort resturant and were seated immediately. They weren't busy at all (except for Emerils, reservation needed).

Like RPR, HR has a very nice poolside resturant. They serve great burgers, salads, ect. It's so nice. You can grab a table and order for the kids. When the food comes, just call them over and they can eat in their suits. If you don't want to eat in the resturant, they will even bring the food to you at your chair.

We really enjoyed eating at Jimmy Buffet's Margaritaville, very fun atmostphere, kid friendly, great food and great margarita's! They do a 30 day in advance priority seating.

We have eaten at Pastamore, casual Italian food, my dh enjoyed his dinner I thought mine was o.k.
We have eaten at NBA City and thought that it was average.
We have eaten at the Latin Quarter and thought that it was average.
We have eaten at Nascar Cafe and thought it was average.
We have eaten at Hard Rock Cafe and thought it was average.
All the above restaurants weren't bad, they were just your average meal, nothing wow but nothing bad either.

We ate at both of Emeril's restaurant, we thought that that our meal Tchoup Chop at the Royal Pacific resort was 10 times better than our meal at Emeril's at Citywalk.

In the parks we have mostly done the counter service restaurants.

So my favorite 2 restaurants hands down are Margaritaville and Tchoup Chop. Margaritaville is moderately priced and Tchoup Chop is more expensive but both are great restaurants!

Margaritaville-great Margarita's!

If you don't drink they both have awesome food!

Read something on these posts that Nascar Ribs are Excellent!!! Have tried Tony Romas for Ribs, but these posts seem to point to superb in the rib category at Nascar?

Anyone else hear about the ribs at Nascar?

I have had them and thier pulled pork and both are great and my 2 Ds's loved the lucky dog and it was so big the bun fell apart and they had to use a fork to eat it and me and Dw had Brickyard burger and thought it was great and DW had the spinich dip and loved it.

With our 10 and 12 year old kids this past March, everyone enjoyed our meals at Margaritaville, Nascar Cafe, NBA City and Mythos. Lots of good menu selections for both adults and kids, and it honestly is not a big hassle getting a table. We generally are pretty early eaters anyhow to avoid crowds (we had lunch at 11:45 and dinner about 5:00) and we never encountered any wait times.
