Okay, the last time we stayed at Contemporary it was definitely too small for me (and I'm a 5'7" size 0) and was glad to have a real bed, but that was about 5 years ago so maybe the updated ones are bigger. I also don't remember them providing actual bedding for it. Again parties vary, but I think outside of an immediate family (parents and kids), I wouldn't really count the day bed as a third bed. Plus then you lose the seating/sofa area. I personally would go for something with at least the appropriate number of fold outs but to each their own.
I'm 5'11" and slept on the day bed at the GF.
We have had tall older teens sleep on the day beds at all the deluxe resorts. They have always been made up with appropriate linens and everyone concurs that they are far more comfortable than any of the sleeper sofas due the depth and size of the mattress. The measurements of the mattress on the deluxe daybeds are a standard twin size. The earliest I remember using the daybed at the Contemporary was 2004 and it was the same size at that time. Personally, I would request a roll away or the daybed over any sleeper sofa/fold out they are universally awful IMO.
