Resort Hopping Quick Service

By that logic -- going to a value resort for the quick service probably wouldn't be something of interest either. For you. But it is for the OP. Yes they could stick to the monorail but they've expressed interest in visiting other resorts. And unfortunately the only way to guarantee they won't be turned away is to take WDW transportation.

OP -- consider the transportation part of the adventure. When we resort hop we try to use different modes of transportation and possibly different routes than the most direct.
Nope. I love to visit other resorts to eat quick service. But if I have a car, I’ll take a chance and drive. That’s part of the adventure for us. Being turned away is not time consuming or a big deal. You just move on and have a plan B.

The OP also doesn’t sound keen on using Disney transportation. So my best advice is to drive. If they want a surer thing, the AllStars/Port Orlean resorts are good bets for getting in by car.
 
I like to take alternate transportation when at Disney - boats, skyliner, monorail...I'm not as excited with taking busses, though I prefer any Disney transportation to driving my own car which I always have with me. It just makes me feel like I'm AT DISNEY - I love to drive in general, but when I'm at Disney, the transportation is more immersive and keeps me in the vacation head.

In general, if staying at Poly and not doing any parks, I'd be willing to monorail over to the other MK resorts for their quick serves. I'd definitely take a Poly boat to MK then transfer to the Wilderness Lodge boat as I love those boat rides and love Wilderness Lodge's theming - though I wouldn't be going for the quick serve - instead it would be Geyser Point.

I'd also be willing to either drive to or hop the bus to DHS in order to walk over to Boardwalk, Beach, Yacht, Swan, and Dolphin, as well as to take the Skyliner to Riviera. It's a medium walk, but relaxing and quiet, and there are lots of options around the Epcot resort area - both quick serve and casual as well as full table-serve restaurants. I find some of the best casual burgers/fries/rings/shakes to be at the Fountain.

I'd use Disney Springs as a hub - drive there, then hop the boats to French Quarter or Riverside. Again, I love that long boat ride. And of course, Disney Springs itself is loaded with great food options from quick serves to kiosks to table service. The only resorts I wouldn't likely bother to go to for quick service would be AK Lodge, Coronado, or All Star, as those would involve driving, or multiple transportation options to get to. Coronado and AK have some great quick serve options, but I'd prefer to avoid busses and driving myself as much as possible.
