First, a villa must be available. Once you have a 2B booked, you cannot simply eliminate the studio and downgrade to a 1B. If there are no 1Bs available, your only option would be to go on the waitlist.
If there is a room available and it's less than 31 days before arrival, the points will simply be returned to your account. The points must still be used before the end of your Use Year. If they are current year points, they can be banked subject to the banking guidelines.
If the points have been borrowed from the next Use Year, then you simply must use them before the end of the UY. You cannot "unborrow" points, nor can you bank them.
If you try to change the reservation less than 31 days before arrival, excess points would go into a Holding Account and can only be used to book a trip 60 days or less PRIOR to arrival, and they must be used by the end of the current UY.
I agree with TnRobin about keeping the 2B. All of the documents we signed as members limit occupancy to 4+1 under age 3 for a Studio or a One Bedroom. All Disney resorts do now track individual guest names for things like granting permission to Extra Magic Hours, so it's difficult to slip someone in under the radar.
DVC reportedly will allow 5 guests in a One Bedroom, but, as Robin said, no extra bedding, no cots or rollaways, no extra towels.
And, since that policy is unofficial and goes against the written agreements we have with DVC, they could certainly revert back to the 4+1 policy without notice. Even with just 5 people you'll be much happier in a Two Bedroom villa.
