Remy/Palo Brunch on 7 day cruise booking question

I am PIF! and can book 75 days out shortly (not yet up to my 5th cruise, but close). I have missed out before the jet skis at CC so I always set the alarm for midnight and book those. It is very expensive, but the kids really, really love it. Not terribly worried about excursions as we have been on this cruise before, we like to snorkel, and there are a fair amount of those that all seem rather similar. I was wondering about brunches at Remy/Palo? Doing it this time and have two questions:
1. Do you think 75 days out I will still be able to get a brunch on a sea day (7 day cruise), and
2. Do the brunches change - anyone do more than 1 brunch during a 7 day cruise, do Remy twice, or maybe a Remy and the a Palo brunch?

If you've cruise DCL before, your booking window is 90 days out (Silver Castaway Club level). But, you must be paid in full to book excursions.

You can pre-book one of each type meal at Palo & Remy (1 brunch and 1 dinner each). Once onboard, if there is availability, you can book more.
 
I have never had a problem getting a brunch reservation on a 7 night cruise as silver. And if by any chance you don't, they do hold slots onboard so you should be able to get one then.

Probably. As noted, they do hold back a number of reservations for booking onboard. If you are unable to book online, look in the Navigator you get at check in for the Palo dining changes location/time and go there to see about booking a reservation.

We've always been able to get Palo brunch when booking.

My son and I are about to cruise on the Fantasy on December 17th (a packed holiday sailing). We booked at less than 60 days out, after everyone's PIF & several days after everyone else's booking window had opened. Nevertheless, I was still able to book Palo brunch (sea day, of course), Palo dinner & Remy dinner immediately. Remy brunch was booked up, but I kept checking back every week or so, and since last week it's had availability, so I booked it. All 4 continue to have availability. I will be dining solo, so that might have something to do with their availability, though. I was also able to book a character breakfast for my son and me at initial booking for a sea day. We were able to get a 12:30 PAT.

The CC jet ski excursion (both single & double) still has availability for 2 people- just booked that. A Tortola excursion I wanted that only had afternoon availability at my initial booking has since opened up to morning booking again (for 2 people), so I nabbed that, too. The golf & sports simulators both had availability at the time of my initial booking.

The only thing that seems to be impossible to book on my cruise, even as a latecomer to the game, is a cabana, but that's no surprise to me.

Some people on these boards asssume that everything good that there is to book will be unavailable if you don't book immediately upon your booking window opening, but they're wrong.

I never stress about not getting a Palo brunch or dinner reservation online. Have been shut out online several times but can always snag one once onboard.

As far as the brunch menu changing, I believe Remy does not change menus from day to day. However, even though Palo is the same every time, their offering is so rich that you can't possibly begin to eat everything they have to offer, so you could eat there on three days and have a different meal each time. Easily (I know, we did that on a PC cruise).
