I'm trying to get DH excited to try Remy and/or Palo on our upcoming Dream cruise...would love to be able to show him recent photos or your opinions on them! Even photos of recent menus would be helpful.
 
Thank you, we've actually been looking through that page daily. What I'm more looking for is recent photos WITH the person's review of how it was, what they would and would not try again, what they wish they had tried, and also any photos of recent menus.
 
Following, I am having the same issue with my DH.. I would love to see some Palo dinner entrees to show him, I have seen plenty of the brunch items.

We did Palo brunch and Remy brunch, dinner (with white truffles and wine pairing), and dessert experience (with wine pairing) last week. Each was a wonderful and highly recommended experience in its own way. We took pictures of everything, but I'll have to sort through all our photos. Is there anything in particular, you are interested in?

I'm very interested in all of it! Would love to hear your recommendations and see any photos you are willing to share. We have been going back and forth as to which restaurant to choose for dinner as I think we will only take one night away from DD. I'm leaning towards Remy, but nothing DH has seen so far has swayed him from Palo. (He's a huge Italian food fan)

How was the white truffle dinner? Did you enjoy your wine pairings? I'm more of a champagne fan than wine unfortunately.

Each of the experiences was fantastic in its own right. Last year, we (party of 5) did Palo and Remy dinners. If I have to say something negative, we were a little disappointed with the Palo dinner which none of us found that different from the the offerings in the MDRs. The Remy dinner, on the other hand, absolutely blew us away. It was incredible, and several members of our party commented that it was the best meal they ever had. We did the wine pairings which added significantly to the experience. Of the two menus, Remy recommended the American for the men and the French for the women and we went with that the first time.

This year, we sailed concierge for the first time and used the opportunity to try all the Palo and Remy options, except for the Palo dinner. For Remy dinner, we were a party of 6 and were assigned the larger table in the secluded room that also is used for the introductions to the Remy brunch. We had the captain's table in Palo last year, I can't remember whether it is called the same in Remy. In any case, it was extraordinarily beautiful and we got some great photos that I'll try to dig up.

Last year, the white truffles season had just started and we were presented with the option for a surcharge of something like $225/person. We passed, but I regretted it later and wanted to try it this year. I had been thinking that we could get 2 white truffle menus and share them between us, but the waiters discouraged that as the white truffle menu is completely separate from the French and American menus. Instead, they recommended two of the 6 dishes which were easy to share. Remy allows you to order individual dishes for a charge of $95 each and we went with two orders of both dishes, which then were served in between the dishes from the regular French and American menus. The first was a toast with white truffle foam (sorry, I don't have the white truffle menu and can't find it online). I could see it being wonderful as part of a full 6 course white truffle menu, but it was underwhelming for the price. The second dish, gnocchi with shredded white truffle, was very elegant and flavorful. If you want to splurge and just try one dish to split between the two of you, I would recommend this. Unfortunately, I didn't get to try the full white truffles menu this year either as I really wanted to try the French menu, but it is on my bucket list for next time.

Our party was significantly split between the American and French menus. Personally, I have to say that I preferred the American which had a few dishes that I still remember as unbelievable. The French menu was a bit more subtle, but also extraordinary. I did feel that the wine pairings made a bigger impact on me with the American menu, but that's just me. Both guests, who had the French menu last year, chose it over the American again this year. My sister commented that she recalled it as "very clearly better" than the American. One member of our party, who had the American last year, chose it again this time. I guess you just have to try both yourselves.

Aside from the white truffles and the wine pairings, the latter of which was the easiest decision of the evening for all of us, Remy offered a couple of other options that I have not seen described elsewhere. One was Kobe beef, which I believe was an extra $50/person, and I can't remember the last one, except that it didn't seem appealing to us. If anyone does, please remind me.

As for Palo brunch, Remy brunch, and Remy dessert experience, I'll have to get to those another time. I am still unpacking and nursing a flu that I got on the way home. Mainly, I strongly recommend that you go for the Remy dinner: it was once again a highlight of our vacation. This year, we had the luxury of having a suite where the 3 kids enjoyed dinner over room service. It was nice since, despite our planning, they ended up not getting anything to eat all evening last year, which I felt really bad about.
 
I'm sorry you aren't feeling well, thank you for giving me some highlights though. My DH is not a drinker (like ever, doesn't touch the stuff), so hopefully that won't detract from his meal too much.

He's curious which parts of the American meal made it so much better in your opinion.

Thanks for the tip about giving the kids dinner in the room, we have a 1 bedroom concierge room, so should be able to order something from the MDR for DD.
 
We really loved the Palo dinner both times we tried it on the Fantasy. On this past trip we also tried the Palo brunch, and weren't really blown away by it like some others have been. We thought it was good, but we found the Cabanas breakfasts and lunches really good and it didn't seem like that much better of an experience.

I had the fried calamari, which was perfect, and my wife had a caprese salad (tomatoes and fresh mozzarella), I think we both had soups, which I can't remember at all, and for the mains, I had the filet with the Gorgonzola and my wife had a stuffed chicken maybe? We all really liked EVERYTHING. It was all excellent. The desserts were great as well. The chocolate soufflé was amazing, which I didn't think so last time.

For brunch the only thing we loved was the mozzarella in carozza. The chicken parm that everyone raves about and the grape pizza were both just good. Not as distinguishing as dinner. But we live in NY and eat a lot of good Italian food. I know there are many areas of the country (or out of the US) where you can't get good chicken parm, so it might be worth it if you're from those areas. :)
