Thank you for sharing the menus! Would love to hear more about what you liked, disliked, and would strongly recommend...how was the white truffle experience at dinner?
Each of the experiences was fantastic in its own right. Last year, we (party of 5) did Palo and Remy dinners. If I have to say something negative, we were a little disappointed with the Palo dinner which none of us found that different from the the offerings in the MDRs. The Remy dinner, on the other hand, absolutely blew us away. It was incredible, and several members of our party commented that it was the best meal they ever had. We did the wine pairings which added significantly to the experience. Of the two menus, Remy recommended the American for the men and the French for the women and we went with that the first time.
This year, we sailed concierge for the first time and used the opportunity to try all the Palo and Remy options, except for the Palo dinner. For Remy dinner, we were a party of 6 and were assigned the larger table in the secluded room that also is used for the introductions to the Remy brunch. We had the captain's table in Palo last year, I can't remember whether it is called the same in Remy. In any case, it was extraordinarily beautiful and we got some great photos that I'll try to dig up.
Last year, the white truffles season had just started and we were presented with the option for a surcharge of something like $225/person. We passed, but I regretted it later and wanted to try it this year. I had been thinking that we could get 2 white truffle menus and share them between us, but the waiters discouraged that as the white truffle menu is completely separate from the French and American menus. Instead, they recommended two of the 6 dishes which were easy to share. Remy allows you to order individual dishes for a charge of $95 each and we went with two orders of both dishes, which then were served in between the dishes from the regular French and American menus. The first was a toast with white truffle foam (sorry, I don't have the white truffle menu and can't find it online). I could see it being wonderful as part of a full 6 course white truffle menu, but it was underwhelming for the price. The second dish, gnocchi with shredded white truffle, was very elegant and flavorful. If you want to splurge and just try one dish to split between the two of you, I would recommend this. Unfortunately, I didn't get to try the full white truffles menu this year either as I really wanted to try the French menu, but it is on my bucket list for next time.
Our party was significantly split between the American and French menus. Personally, I have to say that I preferred the American which had a few dishes that I still remember as unbelievable. The French menu was a bit more subtle, but also extraordinary. I did feel that the wine pairings made a bigger impact on me with the American menu, but that's just me. Both guests, who had the French menu last year, chose it over the American again this year. My sister commented that she recalled it as "very clearly better" than the American. One member of our party, who had the American last year, chose it again this time. I guess you just have to try both yourselves.
Aside from the white truffles and the wine pairings, the latter of which was the easiest decision of the evening for all of us, Remy offered a couple of other options that I have not seen described elsewhere. One was Kobe beef, which I believe was an extra $50/person, and I can't remember the last one, except that it didn't seem appealing to us. If anyone does, please remind me.
As for Palo brunch, Remy brunch, and Remy dessert experience, I'll have to get to those another time. I am still unpacking and nursing a flu that I got on the way home. Mainly, I strongly recommend that you go for the Remy dinner: it was once again a highlight of our vacation. This year, we had the luxury of having a suite where the 3 kids enjoyed dinner over room service. It was nice since, despite our planning, they ended up not getting anything to eat all evening last year, which I felt really bad about.
