Recipe from Riverbelle?

Does anyone know where I can find the recipe to the country potatoes at the Riverbelle Terrace?

My dh LOVES those and I would love to TRY to make them for him. Notice the bolded try I am not a good cook but maybe I could give it an effort or burn the house down trying!:scared1: :rotfl2: I have one of the Mickey parks recipe books but unfortunately it's not in there.

Any suggestions would be greatly appreciated! Thanks in Advance!
 
I don't have the "official" recipe, but these are something that I make a lot for weekend breakfasts.... Take skinned potatoes (idaho work best) and cube them. Add in diced green & red peppers, onion and sautee them in a little oil with salt and pepper... Cook until the potatoes are tender... YUMMO!
 
Thanks Wendy! I'll try that Sunday! Dh says they taste and smell like they are smoked on a grill. :sad2: He's one of those men that thinks EVERYTHING should be smoked on a grill! :rotfl2:
 
Yum! We love those potatoes too. If they only came with cheese on the top they would be even more yummier!
 

I like to use yukon gold potatoes. They hold their shape really well. Use a lot of seasoning salt on them. Johnnys or Lawrys seasoning salt works well. If you want them to cook faster you can cube them, and boil them until they are about 1/2 cooked (you can even do that the day before if you want). Then fry them up. I usually add the peppers and onions after the potatoes have cooked a little bit, so they dont over cook and turn mushy.
