Could you sub your alcoholic drinks with some drinking in the room? Getting some wine/beer delivered would be so much cheaper than having drinks out all the time. If out of the 12 days, you drink in your room about 5 days (would $25 be enough for alcohol to drink in the room for 5 days?), that would save you $100.
With having big bills coming up, I'd personally trim back on spending on vacation a little to reduce your stress when returning home. Maybe make it a game? How much can you get for how little? I actually fun seeing how much fun I can have on a shoestring budget. And have found that most things that give me the most enjoyment don't actually cost all that much.
Order some cool stuff for breakfast from Instacart or whatever (if you have a car/access to offsite grocery stores that's even better!) so you're not so tempted to eat Disney's overpriced danishes. Look for unique American breakfast foods you don't get at home that you'd particularly enjoy and make it part of the fun. Different cereal, pastries you don't typically get at home, interesting frozen foods, oddball chip flavours, that kind of thing. Stuff that screams vacation and different from home (it helps that you are traveling from a different country!) - but much cheaper than always eating out in the parks.

(you could cut this a wee bit by having a couple of dinners in your room with interesting frozen dinners - a perfect fit with afternoon breaks)
Alcoholic drinks: $25/day x 7 days = $175
Alcohol grocery order = $25
Grocery order (breakfasts $5/day x 12 days + $40 fun snacks) = $100
Snacks in the park: $5/day x 12 days = $60 (if you spend a bit more on a meal one day, skip your snack that day)
Total: $840
It's up to you what you want though. This would be more budget-conscious eating (with still plenty of room for indulgences and fun vacation food). For me, while I LOVE all kinds of food on vacation, I'm also happy to eat more budget-consciously, especially if it helps me further my other financial goals.
QSDP would be $1156.56 for 2 people for 12 nights. Add $300 for alcoholic drinks and you are at $1456.56. Quite a bit more.
