Oh yeah. I remember way back when. Vaguely. So. Did anyone recommend Dan Brown and Michael Crichton? Cause I've read about 14 of their books (well, only 3 Dan Brown's) since September. Just wondered if I had inadvertantly taken anyone's advice.

And. I did NOT have guac tonight. Because I forgot the stupid avocados.

Actually, I DID have it. At the Mexican restaurant. On my chimichangas. But it was the pureed kind. So it doesn't count.

I doubled this. I put my changes in parentheses. Mmmm, very tasty. Was excellent while I was under the weather this weekend.

Zuppa Toscana Soup~like Olive Garden's®

1 lb. spicy Italian sausage - crumbled (I used mild, to accommodate DS)
1/2 lb. smoked bacon - chopped (I used peppered bacon, that's what I had on hand)
1 qt. water (I used chicken broth instead of water)
(2) 14.5 oz. cans (about 3 2/3 cups) chicken broth (used Swanson's garlic chicken broth here)
2 lg. russet potatoes - scrubbed clean, cubed
2 garlic cloves - peeled, crushed
1 med. onion - peeled, chopped
2 cups chopped kale OR Swiss chard
1 cup heavy whipping cream (I used fat free half and half)
salt and pepper - to taste

-In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
-In a skillet over medium-high heat, brown bacon; drain, set aside.
-Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender.
-Add sausage and bacon to pot; simmer for 10 minutes.
-Add kale and cream to pot; season with salt and pepper; heat through.
 
Wesley ate three helpings of this. Plus biscuits. Yum-my!

AUTUMN BEEF STEW
12 small red potatoes, halved (I didn't use potatoes; used parsnips and turnip roots instead)
1 pound carrots, cut into 1-inch pieces
1 large onion, cut into wedges
2 pounds lean beef stew meat, cut into 1-inch cubes
1/3 cup butter OR stick margarine
1 tablespoon all-purpose flour
1 cup water (used beef broth instead)
1 teaspoon salt
1 teaspoon dried parsley flakes
1/2 teaspoon celery seed
1/2 teaspoon dried thyme
1/8 teaspoon pepper

Place potatoes, carrots, and onions in a 5-qt. slow cooker. In a large skillet, brown beef in butter. Transfer beef to slow cooker with a slotted spoon.
Stir flour into the pan drippings until blended; cook and stir until browned. Gradually add water. Bring to a boil; cook and stir for 2 minutes or until thickened. Add salt, parsley, celery seed, thyme, and pepper; pour over beef. Cover and cook on low for 8-9 hours or until meat and vegetables are tender.
YIELD: 8 servings
 
These were the best waffles I've ever made! Nuff said!! Made these in my Mickey Waffle Iron. Wesley is a happy camper!

Light, Crisp Waffles
by Pamela Anderson
Serve with melted butter and warm maple syrup, or try making your own Brown Sugar Syrup.
Yields four or five 8-inch waffles.

ingredients
3-1/2 oz. (3/4 cup) bleached all-purpose flour
1 oz. (1/4 cup) cornstarch
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
3/4 cup buttermilk
1/4 cup milk
6 Tbs. vegetable oil
1 large egg, separated
1 Tbs. sugar
1/2 tsp. vanilla extract

how to make

Heat the oven to 200°F and heat the waffle iron. Mix the flour, cornstarch, salt, baking powder, and baking soda in a medium bowl. Measure the buttermilk, milk, and vegetable oil in a Pyrex measuring cup; mix in the egg yolk and set aside.

In another bowl, beat the egg white almost to soft peaks. Sprinkle in the sugar and continue to beat until the peaks are firm and glossy. Beat in the vanilla.

Pour the buttermilk mixture into the dry ingredients and whisk until just mixed. Drop the whipped egg white onto the batter in dollops and fold in with a spatula until just incorporated.

Pour the batter onto the hot waffle iron (mine takes about 2/3 cup) and cook until the waffle is crisp and nutty brown (follow the manufacturer's instructions for timing at first and then adjust to your liking). Set the waffle directly on the oven rack to keep it warm and crisp. Repeat with the remaining batter, holding the waffles in the oven (don't stack them). When all the waffles are cooked, serve immediately.
 
Grilled Ham Steak with Peach Chipotle Glaze

INGREDIENTS:
1 Cook's® brand Bone-In
Thick Cut Ham Steak
1 (20 ounce) jar peach
marmalade
2 garlic cloves, chopped
1 shallot, chopped 2 teaspoons olive oil
2 tablespoons Dijon mustard
2 tablespoons rice wine vinegar
3 tablespoons chipotle sauce
Salt and pepper to taste

DIRECTIONS:
1. Saute garlic and shallot in oil until soft. Add remaining ingredients (except for ham steak) and simmer for 15 minutes. Set aside.
2. Prepare charcoal or gas grill. Place ham steaks on grill over medium heat. Grill 3 minutes. Turn ham steak; brush with peach chipotle glaze and continue to grill 3 minutes. Turn again; brush with remaining glaze, continue to grill 1 to 2 minutes or until ham is glazed and heated through.
 
Santa Fe Soup

1 lb. ground beef
1 onion, diced
1 t. minced garlic
10 oz. can Rotel tomatoes and green chilies
15 1/2 oz. can chili beans
15 1/4 oz. can corn
14 1/2 oz. can diced tomatoes
1/2 lb. Mexican Velveeta

Brown ground beef and onions; drain. Add rest of ingredients except cheese. Simmer 10 minutes or so, then add Velveeta and stir until cheese is melted.
 
ALL of those look great, Rhonda. Although I make a killer beef stew, and that recipe is very similar. Funny, I was thinking that it's almost beef stew weather. May have to make some this weekend.

BTW, we have eaten Dream Dinners about 5 of the past 8 nights. For the most part, they've been very good! At least we're having some variety!! (Not tonight, though. I picked up pizza on the way home..)

Susan, I had to wear a long sleeved sweater today. Down to 80 high, and getting worse later this week! Had some hot soup tonight.

I made beef stew 2 weeks ago, yummy!!!!!!!!!! Love those dumplings best, I think, with the gravy.

Ash! We have "My Girlfriend's Kitchen" here and I've heard wonderful things! I want to gather a crapload of friends and go assemble our meals! Sounds like a dream.

Marita --you would be wearing a winter coat in my house. It is always set at 68F. We always have blankets on when we sit and watch tv.

Rhonda-- yummy, almost wished I cook. Gymnastic tonight so we had leftovers from the last three nights.
