Hello. And Welcome Back. Good to "see ya".

You're sending me something ? Aww shucks. Thanks.

I see you are blogging. I haven't broken down. As of yet. I hate Blogs. They are drab and gray, and there are no dancing naner men. You need a dancing naner man. Every once and a while. Plus, I hate words that are not spelled correctly. It gives me hives. Or a severe rash. OR that might be from something else. Not sure. :teeth:

For all you northern persuasion type people:

Grits are the economical/frugal/cheap version of polenta.

So go pay $8. a bowl for polenta when we can get a bowl of grits for 1.95.

Last edited by jamal : Today at 10:12 AM. Reason: tink make me some grits

You want cheese on those, hon? Or just lots of butter and salt?
(They'll be ready in about 45 minutes. Yup. I make REAL grits.)

Well, sad news to report on the Continuing Croc Conundrum . . .
Now they don't have MY size in light blue (at either of the places where I found them cheap - fogdog and shoebuy w/ coupon.) Carp. I really don't want to have to pay full price for all 3 sets. I can still get the girl's in light blue, so I guess I should hop on that one. And mypoints says that the webcertificate will take 2-3 weeks. Is this accurate? Major bummer.

I'm with you Haley and Jam - on the blog thing. Except the Sisters of Insanity, of course. (but I do read Mel's, even though it is difficult to keep track of where I am at. Sigh.)

You're cracking me up. Now I need to go check the blog.

But first, the budget board, to see if anyone has (sigh) a discount code for nofeargear before I put in my order (double sigh). I'll be getting light blue for me, light pink for the girl, and sea blue for the boy (their navy is on backorder also.)

GACat, Order the frickin (no apologies, even , Frick..it had to be sad!) Crocs, baby!

Do I need to give you my credit card #? Grammy has it so ask her.

I am poor and cheap but paid full price to get navy Crocs for both boys and the flip flops for me before our March trip and we have all worn them almost daily since then.

Free yourself of this burden, baby. You have crafts to do!

Holy carp

I just read pages about grits. Then I skipped ahead because lunch is almost over. And I have carp to get done.

Anyhow, I think I may have never tried grits. But I like Cream of Wheat. Mostly if you make it Indian style with lots of sugar and spice.

But Oatmeal is my real stand-by.

Horsey has a clean house. Maybe I need to take a break from the boards too. Mine is a nightmare mess. Welcome home Horseybaby.

The weirdest thing happened to me yesterday.

I was at work and the phone rang. I answered it and some guy (who's voice I didn't recognize) asked for drebert. For one stunned moment I sat there and thought OMG someone from the dis got my work number! I said "this is she" and my brother laughed. Arrrrgggg! About gave me a duckfit! Or confit!

They call me that all the time but never on the phone!

I am really glad I did not pick the nick name my brothers gave me as my userid. I did consider it for half a second.

I just bought Steve a pair of Dark Blue Crocs. $23. Excellent deal. I was going to buy them from the buy one get one 50% off and get me another pair but I really want the new Mary Jane style for my next pair. Cause I am a dork that way. I like big chunky shoes. Maybe it is a short person thing. I have a pair of Doc Martians too. They were Ryans but he grew out of them and they fit me perfectly. He grew out of them when he was 11, about 3 months after his Grandma got them for him.

Avoiding work, 24/7. :teeth:

Where the crap is Chris???

Why do the trainees keep walking past my office and looking in? I'm giving them the look and yet they are too obtuse to get it.

Should I close my door?

Where the frick (sorry, Frick) is Sher???? This may be the longest absence ever from her!!! (....which is kinda sad when you think about it!)

Horsey, so fun to see you and your entertaining posts around here again. I really missed both you and Pooh.

NM, you crack me up, too girl.

Topics at hand:

Grits, Cream of Wheat, and other slop: I don't do mushy food. Nuff said.

Crocs, hmmm, Jami, I might consider the flip flops. Comfy, I assume??

Blogs, I post to SOI, and normally check daily. Almost exclusively lurk on TOOT. Mainly so I won't miss any new "codes"! HOWEVER, in my craziness of the past week I have been remiss. Sher was confusing the heck out of me earlier.......I may have to do a big-time recap on Sunday. It's supposed to rain!

Back to work...............BTW, anybody have a good Chicken Marsala recipe? If you make it, do you add ham or prosciutto? None of the recipes I got off the internet did, but seems it always has it in restaurants.....

I think Sher may have gone looking for Chappie

Time for the search and rescue crew

Sweetie, I think you are confusing Marsala with Saltimbocca.

Oops. I found one with prosciutto for you. Here ya go!

Chicken Marsala Recipe

4 skinless, boneless, chicken breasts (about 1 1/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
4 ounces prosciutto, thinly sliced
8 ounces crimini or porcini mushrooms, stemmed and halved
1/2 cup sweet Marsala wine
1/2 cup chicken stock
2 tablespoon unsalted butter
1/4 cup chopped flat-leaf parsley

Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them; pound with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly.
Heat the oil over medium-high flame in a large skillet. When the oil is nice and hot, dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess. Slip the cutlets into the pan and fry for 5 minutes on each side until golden, turning once – do this in batches if the pieces don't fit comfortably in the pan. Remove the chicken to a large platter in a single layer to keep warm.
Lower the heat to medium and add the prosciutto to the drippings in the pan, saute for 1 minute to render out some of the fat. Now, add the mushrooms and saute until they are nicely browned and their moisture has evaporated, about 5 minutes; season with salt and pepper. Pour the Marsala in the pan and boil down for a few seconds to cook out the alcohol. Add the chicken stock and simmer for a minute to reduce the sauce slightly. Stir in the butter and return the chicken to the pan; simmer gently for 1 minute to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

I am eating my candy bar since no one objected.

Oh, crap! It's food section day! What am I doing here???

I knew I could count on you!!! Thanks sweetie. (And I KNOW the difference btwn Marsala and Saltimbocca! Saltimbocca has cheese, and it's made with a different wine....)

(Do you think this will convert well if I make it for about 40 people?!?)

Sure it will. You can even do the chicken early in the day or the night before and put it in the oven on warm while you make your sauce.

And in response to your edit, usually it is not a good idea. But Chicken Marsala is easy peasy lemon squeezy. So don't get your panties waded over it.

YOU CAN DO IT!!!!

Yeah, what I'm thinking of doing is cooking the chicken, then making the sauce, and not putting it all together until an hour or so before serving. Don't want the chicken to get overcooked, and don't want the sauce to get too "soaked in" to the chicken. As long as I don't have to do much "work" while the party's in full swing.

Thanks for your help, oh revered chef extraordinaire..........
