Thanks Don for all your help. We will be there in February and I'm dumping the Fish as our last night dinner and going here instead. I loved Ireland when I went (friendliest people on Planet Earth, Jamacia is now Number 2) and can't wait to check this out.
No problem, my pleasure. I have two juicy tidbits for you guys today. I know the menu and I know the opening date. The menu was described in detail to us today, along with photos of each dish, by the executive chef himself, Kevin Dundon, who is a very accomplished Irish chef...supposedly the best in Ireland. He cooks for the stars, heads of state, etc. He cooked for Brad Pitt and Angelina Jolie 3 weeks ago in Ireland at Kevin's estate (Dunbrody House), for what it's worth. I think I heard he's going to be on Good Morning America sometime very soon upcoming too (or some show like that). Anyway, the menu is brilliant and delectable to say the least, yet, too lengthy to even attempt to post here. You wouldn't believe the lengths these guys have gone thru to ensure the utmost quality of all ingredients. Seriously, you wouldn't believe me if I told you.
Opening date, as of today 26/9/05, the opening to the public is targeted for 10/10/05. If they can do it sooner it will happen, but if so, it'd only be sooner by 1-2 days. Early next week is all of our state inspections, this is our last major step in the process of opening. If it changes, which is certainly possible of course, don't get mad at me...I'm merely relaying the info I'm being given.
By the way, if you're curious about our chef, then Google Kevin Dundon and/or the Dunbrody House on the Internet for more info on him. He's amazing, and rather modest too.
***Sorry about all of the multiple posts from me today, but I had several posts to reply to and I don't know how to multi-reply all in one post.
Cheers everyone! Or slainte if you're Irish or Irish-spirited!
