I was just going through some things that I found in my grandmother's papers. (I'm doing some family research & found a box of funeral memorial cards, obits, pictures, etc.)

There was a tablet with recipes written by great-great-aunt. I wish I'd had these last winter when someone was looking for depression Era recipes. I'm pretty sure these qualify.

Potatoes & Corn Loaf

1 qt mashed potatoes
1 can corn
2 Tbl melted butter
1 tsp salt
dash of pepper
1 tsp grated onion
2 eggs

Mix potatoes, corn, butter & seasoning. Beat the eggs until light. Reserve 1 teaspoon to brush the top of the loaf. Brush the baking dish with the fat. Put the eggs in last & bake 30 minutes.

Potatoes & Peanut Butter Croquettes

1 qt hot mashed potatoes
1 cup peanut butter
1 tsp salt
1/2 tsp grated nutmeg
1 Tbl chopped green pepper, parsley or celery tops
1 egg, beaten
1 Tbl milk
Bread crumbs

Add peanut butter and seasoning to potatoes; mix well. Shape into croquettes. Beat egg & add milk. Dip croquettes first in egg/milk & then in bread crumbs. Fry croquettes in deep fat.

Smothered Potatoes & Bologna

1 qt sliced potatoes
1 Tbl drippings
1/2 lb bologna
1 Tbl chopped onions
1 tsp salt
pepper to taste

Put drippings & onions into frying pan. Add the potatoes - do not slice too thin. Cover pan so no steam can escape. Add just a little water & cook slowly. Turn several times, cook until brown. Cut bologna into 4 slices. Place on top of potatoes. Cover pan to heat bologna. Sprinkle with parsley or celery tops.
