Quick...need some ideas to use up a ham

I was given two frozen hams at work last week. By the time I got home, the hams were partially thawed. So, I stuck them in the refrigerator. We made a couple of meals out of them. Now they are pretty close to their "best used by" date. I need some ideas for things to make. I have already made mac & cheese with ham. Au Gratin Potatos with ham is in the oven now. What else is quick and easy? I still have 1 whole ham that I have not touched.
 
Ham salad for sandwiches? That's not going to use up much..Pea soup?

Does anyone know why they can't be frozen again?
 

Well, we like hot ham and cheese sandwiches. Just make a ham and cheese on a nice roll, wrap it in tin foil and bake it in the oven at 350º for about 15 mins, until the cheese melts.

Then there's grilled ham and cheese.

Ham and cheese omelettes are another option.

And I wouldn't rule out re-freezing it, either.

Hawaiian pizza?
I use Sweet Baby Rays BBQ sauce, then just use cheeese, ham and pinapple as toppings.
 
Thanks for the ideas. Can I re-freeze it? It was originally packaged in August and the "best if used by" date is 2/19/09 (today.) Will it still be OK if I refreeze it and thaw it again later?
 
It sounds like you can refreeze it. What I would do it cut it into pieces I can use for meals or sandwiches and individually freeze those parts. If you are wary of refreezing, just make sure that when you do use it, it is going to be in a cooked meal, then the bacteria will be killed.

Yes you can. Generally when you warm it first bacteria settles into it and then when you thaw it once more to consume it, you will be eating the (sometimes harmful) bacteria.

Approximate Thawing Times: 4 to 6 hours per pound

Thawing ham in the refrigerator is the only reliable and safe method. It is the recommended method of thawing. It is the slowest but safest method you can use and is the best method for maintaining quality. The temperature of the refrigerator should be maintained at 35°F to 40°F to discourage growth of harmful organisms as the meat thaws. Leave the meat wrapped in its original packaging to prevent dehydration and place on a platter or a tray to catch the drippings as it thaws. Place the ham on the lowest shelf away from other foods in the refrigerator. It may take 3 to 4 days to thaw, so be sure to plan ahead to remove the ham from the freezer and place it in the refrigerator, giving it sufficient time to thaw.

After thawing in the refrigerator the ham can be refrigerated safely for 3 to 5 days. If you decide to not cook the meat within this time, the meat can be refrozen. Just remember that each time the meat is frozen it loses some of its quality. The meat should not be refrozen when thawed using the cold water or microwave methods.
 
If you have cooked it, then you can freeze it.
We do this all the time
Then its easy to thaw if we have forgotten to take something out for dinner
 
Fried rice: stir fry rice, bell peppers, onions, ham and or anything else you'd like. Maybe add some soy sauce. Extra flavorful if you stir fry it in sesame oil

Farm Breakfast: Make breakfast potatoes, stir in ham and any veggies you like, then add eggs (beaten) and cheese.
 
Try a nice casserole. Boiled noodles, can of cream of chicken soup and diced ham. Combine the boiled noodles and other ingrediants heat and serve. You can also add veggies to it such as peas or corn.
If you dont refreeze it just invite your neighbors over for a ham dinner. Enjoy
 
You HAVE to make a big ol pot of pinto beans with the bone if you have one or just the meat if not. Serve with a HUMONGOUS cornbread.
Instead of bacon in the beans use the ham bone.

Bean soup no doubt served with a sliced and toasted crusty bread rubbed with fresh garlic.
I don't have a recipe sry.... I just make it. I guess find one you like and use ham? But make sure you chop it up into bite sized pieces and render off some fat along with the onions, celery, and bell peppers before adding the other stuff.

Ham Alfredo
I use this recipe cuz we just LOVE it-
Title: Easy Alfredo Sauce
Categories: Sauces etc.
Yield: 1 Servings

8 oz Cream cheese; cubed
3/4 c Parmesan cheese; grated
1/2 c Milk
1/2 c Margarine

Throw in some ham ;)

Ham n cheese macaroni salad
Make macaroni salad the way you normally would and toss in finely diced ham n cheddar cheese. It's an entire meal.

Eggs benidict
Replace the canadian bacon with your ham. I use the packaged hollendaise sauce mix most of the time so it's zippy quick.

Cucumber salad with ham.
Sliced cucumbers, onions, halved cherry tomatoes, drenched in either sour cream OR vinegareete dressing. Sprinkle in some pepper and garlic powder either way and O M G!

I don't care for it but my hubby likes pickled pig's feet. You can quick pickle ham pieces.

CHICKEN CORDON BLEU
You'll have to look up a recipe cuz I haven't made this in ages. Basicly a ham n cheese stuffed chicken breast.

Escalloped potatoes with ham.
You can buy the box instant taters and just toss the diced ham halfway through normal cooking and stir. This would be a main dish so a veggie is needed to serve on the side. I say something green.

Ham n cheese cornbread.
Make corn bread as usual but throw in some finely diced ham and cheddar cheese to the mix. You'll need to lower the normal baking temperature by 25 degrees and extend the cooking time by ????? You'll need to watch it. A toothpick poked in the center that comes out clean means done.

I wish I could give you specific recipes for everything but I can't-sry. I just cook and they eat.
