Is check-in day counted as day 1? We checked in on Thursday, so is cleaning day tomorrow or Monday?

Yes, check-in is day 1. Sunday will be full cleaning if your stay is 8 nights or longer, otherwise trash & towel service.

However, the real answer is T&T or full cleaning is whatever day you want

Just call Mousekeeping from the room and you can schedule it. We do this most stays to fit our estimated needs.

I am assuming there is a place to take trash if we need it in between? And a laundry facility to wash towels (staying in a studio in December), can't use a towel more then twice.

There are separate trash and laundry rooms. Another options is to purchase a towel pack from housekeeping. If you purchase a towel package, it will not be replaced on trash & towel or full cleaning days. If you need to repurchase if you want another.
