quick/easy lunch/dinner ideas for mini-vacas?

Thinking of what to bring along for meals/snacks when we go away July 4th wknd. Have an idea now of the fruit but what do I do for 4 lunches & 3 dinners? Thank goodness I booked our 3 trips w/a fridge.
cans of tuna (I do eat it out of the can like a cat- lol)
can I pack yogurt in a cooler for 7hrs or wayyy too long?
 
I've seen tuna and chicken salad kits, you can mix in the mayo and then eat it out of the plastic mixing bowl that comes in the kit... that won't require a fridge.

Just before we drove to WDW last time I bought a cooler that plugs into a car cigarette lighter at Sams Club for about $50 - it worked GREAT to keep cheese, a bag of salad, some pre-cooked chicken strips, cold drinks... I also got an adapter at Wal-Mart that will then allow the plug to be adapted to a regular electric outlet that we used in the hotel rooms at night.
 
Will you have access to a campfire? Or are you always staying in hotel rooms??

Shameless plug for my dad's company, he makes those pie irons that you use over a campfire or grill. You can check them out at www.minutepiemold.com that way you can cook pizzas, grilled cheese, eggs, reubans, etc etc.

he's been making them since before i was born. the pies are now on our weekly menus....we build a fire in the backyard and have a ball!! and clean up is really easy! :)

I agree about the Tuna and chicken kits, they are great!! I am taking some of them next week when go to Lake George! :):)

Hows the sodium in those tuna & chicken kits? I find alot of boxed/convenience items have lots of sodium.

I know Indian Head very well, IGTD...beautiful area to stay in!! :) Too bad you won't be able to see Old Man of the Mountains! :( But you can still see Indian Head, who is forgotten most of the time! LOL

WOW chips, WOW doristos, wheat ham sandwiches w/mustard are my favorite quickies. Also prezelts and salsa travel well.
