Anyone have any ideas for quick and easy breakfasts to have in the camper before we go to the parks? We will be on the dining plan for lunch and dinner.

Now.... don't go "eeewwwwww" until you've tried this. One of my favorite breakfast's is peanut butter & bacon sandwiches.
I'll still go "eeewwwwwww", but will have to try that especially on toasted English Muffins which I have had for breakfast with peanut butter and jam. Of course on pancakes or waffles I like peanut butter and honey on themYou can either pre-cook your own bacon & store in a zip-lock bag, or go to Sam's & by the Hormel Black Label pre-cooked (which is what I do). It's a filling sandwich & holds you over until lunch.
The other thing I do is make my own "Egg McMuffins".
Yep, and we do that often on the road, but we do that morning and I didn't consider it that quick as some of the other things we do.
Walmart sells pre-cooked sausage patties & pre-cooked eggs in the frozen food section. All I can say to pre-cooked eggs is "eeewwwwwwww"I nuke 1 sausage & 1 egg patty at the same time for 90 seconds (wrap sausage in a paper towel), toast an english muffin, build your McMuffin w/slice of american cheese & nuke one more time for 15-20 secs to melt the cheese. Fast & easy!
