Question about what to see on first day

We are leaving on Saturday the 17th and we will get to our hotel about 10:00 a.m. My parents will be there around 3:00. We want to go ahead and take my daughter to one of the parks to get a head start, but we have to wait and do MK on Sunday or Monday with my parents. We have a 5:00 PS for the 1900 Park Fare dinner with Cindy on Sat. What would be a good park to visit and get in some of the attractions between 11:00 and 3:00?

How about Epcot? That way you can ride the monorail back to your dinner and it shouldn't take too long. Also, that park is so spread out that you shouldn't have a problem doing things in the middle of the day.
