What time (how early) will they allow you to be dropped off?

Technically as early as you want! However, DCL won't let you in until they open, usually around 1100 or so, depending on the cruise. Also, you will have a pre-selected boarding time, so if it's busy you won't get in early either.

I would have your Uber drop you off no more than an hour before embarkation time. We usually rent a car. I drop off the fam, they get the bags checked in then I drop off the car and shuttle back in time for check in.

You'll get a port arrival time. That's when you should plan to get there.

When your booking window opens (75 days prior to your cruise for first time cruisers) you can go online and pick a Port Arrival Time.
At Port Canaveral the earliest PAT is 10:30-10:45.
Typically at Port Canaveral
9:30-9:45 Parking garage/drop off area opens
You will wait outside until the terminal opens
10:30 Terminal opens. When you check in you will be given a boarding number. The earlier your PAT the lower your boarding number.
11:15-11:30 boarding begins.
Concierge and Platinum board first.
Then they start with everyone else. They call the next number(s) every 4-5 minutes

Our last cruise this past July we arrived at 10.15 (via private shuttle) and were on the line outside the gate that leads to port.
There were about 10 ppl ahead of us and they opened the gate about 10.30
Security was a breeze, had our KTTW around 10.45... we walked in the ship about an hour later (gold, I've no idea what our PAT was)
After this experience, I would def. recommend arriving early. You avoid the huge crowds that start flooding the place around noon.
