Question about rides

We will be in Disney during Thanksgiving week for the first time. Normally we go during the summer. Which rides will have a Christmas theme? I was told that Jungle Cruise is Jingle Cruise during the Holidays and that Haunted Mansion changes to a Holiday theme. Is there anything else? Trying to plan our schedule along with the Fastpasses . Thanks. :)

Jungle Cruise changes, but Haunted Mansion (at WDW in Orlando) does not.
 
Most things at WDW will NOT have a holiday overlay. They just started doing Jingle Cruise, but that is the only one.

At Disneyland in Anaheim, they also do Jingle Cruise, but also have Haunted Mansion Holiday (featuring the Nightmare Before Christmas characters) and it's a small world also gets a holiday theme.

They do more of this stuff in Anaheim because of the large local client base, as opposed to WDW where people come form all over the world, often for a once in a lifetime trip, so they like to keep the classics intact.

WDW does have lot's of holiday decorations and special events, like Osborne Lights and Candelight Processionals at Epcot and such, so you might consider looking into those.
 
Mesaboy already answered about the rides, but aside from Jungle Cruise, there are other things to check out at Thanksgiving. The resorts decorate. You should do a monorail run to hit those resorts and go out the backdoor at Epcot and check out Boardwalk and Beach Club. Also go to see the lobbies of Wilderness Lodge and Animal Kingdom Lodge. Candlelight Processional at Epcot. Osborne Lights at Studios is a do not miss. If you don't already have a reservation for Thanksgiving dinner you will need to get on that ASAP.

Thanks for the suggestion about visiting the monorail resorts. We are staying at the Beach Club Villas so the Boardwalk will be close to us. And Osborne Lights is a must do also. We were also lucky to snag a ressie at H&V for Minnie's Holiday Dinner on Thanksgiving.
 
Just to note - OP said they would be there the week of Thanksgiving. While most of the holiday decorations and events are going on, Epcot does not start the Candlelight Processional, the holiday storytellers, or the holiday tag for Illuminations (my favorite) until the day after Thanksgiving. To me, Black Friday at Epcot is the perfect way to start the holiday season.
