They do not give out carb count or other detailed nutritional information. Disney has realized that they can not give an accurate count due to the way the food is prepped. Instead of risking the customers well being by possibly being incorrect, they have decided against giving out this information.

Contact special diets prior to your reservation about what the needs are. They will give you general information to assist you (but not carb counts). At your meals, you will ask to speak to a chef to get more information. You will tell the chef what you need and they will do what they can to accommodate you.

If you want to contact the Special dietary needs department, there is information in post #3 of the disABILITIES FAQs thread. You can find that thread near the top of this board or follow the link in my signature.
As was mentioned, WDW does not provide carb counts. There are some links in post 3 to past threads about diabetes and how people deal with carb counting without having counts. Here are links to some recent threads:

Most of the pre-packaged stuff has the carb counts on it. If you know the carbs for a certain amount of a certain food, they will measure out that amount for you (or you can bring a measuring cup). We brought a 1/2 cup, and measured out stuff we knew - 20 carbs for 1/2 cup pasta or rice, etc.

You can also use the Calorie King book to compare what he's eating to a similar meal at another restaurant. It's not perfect, but it's close.

That's good to know about the measuring. Can they tell how me much a portion is, i.e. 1/4 cup, 8 oz, etc.?

I didn't try asking them about the portion size. My son was 2 1/2 when we went, so there was no way he'd eat a full portion of anything. They did tell me they could send out a pre-measured amount of whatever he would be eating though
