Question about booking more than 7 days

When you are booking a trip longer than 7 days do you have to wait for the 7 or 11 month mark from the 8th day to book. I call and book 7 days. Can I call the next day and add more or do I have to wait another week. Is this question making sense?

You can call the next day and add one more day, then repeat.
