I love breakfast! :cloud9: Usually I have a whole wheat English muffin, yogurt and/or fresh fruit, but if I’m off and others are home we love cooking eggs (scrambled or over medium), bacon and toast or going out for breakfast to one of many good spots we know. We also will do breakfast for dinner sometimes.

We have a restaurant grade pan that makes a bunch of eggs at a time for Eggs Benedict (that DH got me as a gift one time because I wanted one). Without it we were only able to eat in staggered fashion. I have been wanting to do a family brunch with it but that will have to wait a little longer. Like others have mentioned my kids are good at making egg sandwiches for whoever is home we love them on a raisin bagel!

We often keep hard boiled eggs in the fridge to grab, too. DH and always argue about eggs in the store: he’ll say we have plenty then we go to make breakfast and there aren’t enough!:headache: So I tend to keep a lot on hand. I think breakfast is a comfort food for me. My father loved eggs for breakfast and I remember sitting in his lap while he ate. Those are some of my earliest good memories.

Breakfast? :scratchin Let's see: Weekdays I practically always have the same thing: a ham sandwich, a Greek yogurt and a piece of fruit about an hour after I arrive at work. At home on weekends it's usually cereal, a yogurt and toast - mmm, I LOVE toast!! Breakfast for dinner around here is always some version of eggs, bacon & sausage, potatoes, toast or sweet pastry and fruit. Except of course once a year on Shrove Tuesday when pancakes feature prominently.

Now if you want to talk brunch, that's a whole 'nother thing. Brunch is a lavish affair including interesting recipes that take a little more time and effort and it's usually the main meal of the day. Today's was a fancy carmelized-apple french toast bake with the perfect oven-roasted bacon and eggs cooked to order for everyone. A nice fruit salad tossed with honey, lemon juice and toasted coconut rounded it out. Back in the day (before March 15 :laughing: ) I loved going out for a buffet brunch - there's nothing I like better than being able to have a little bit of a ton of different things.
 
I love breakfast! A brunch style buffet with lots of baked goods and an omlet station is my absolute favorite, always need to hit up The Wicked Spoon when we are in Vegas and we are always there at least 3 hours (usually a larger group). Those Macaroons! Locally our favorite breakfast place is the clubhouse in the next neighborhood over. We are joined up by not too major of roads so we can safely bike there to help justify the calorie bomb that will happen every time. Lots of beautiful fresh fruit, an omlet station and OMG the baked goods! Whoever does their baking is the best baker I have ever come acroos. I can select anything from breads to sweets and know it will be excellent. Even things I dont typically choose are "worth it" calorie wise, its all that good. I hear the shrimp and grits and bagel bar are also really good, although I dont partake. Made to order waffles with bourbon pecans and pancakes are always very good. So many juices to choose from.

At home I typically have 2 or 3 egg whites and a slice of toast. Lately a side of fresh fruits because breakfast is our meal together before DH heads off to work but if we are having a lunch or dinner together I will save our fruit dessert until that meal. Sometimes we are super naughty and add a cookie course. We just gather all cookies we have and select a few, maybe more than a few. Ive found that almond biscotti goes really well with my lemon ginger tea. Thats three flavors I never would have put together and need to figure out how to use that information in my baking. Maybe a lemon ginger cake with an almond glaze?
 
I forgot before to ask a Zoom question. I know the main idea of it is that people can see and hear one another. How does that part work? When you sign up for Zoom are you able to check yes or no on a camera option (where you can be seen by others at the meeting) or is it automatic? I would gather a similar process would be for microphone or do you have to have an external microphone on your computer (if you are on a computer rather than a phone). Thank you everyone. Each time you join a Zoom meeting, you can chose to turn on both the video and the audio. During a meeting, if there is external noise like a dog barking or phone ringing, you can mute yourself. Sometimes with a large gathering, the host will mute everyone unless they are speaking. Same with video. You can turn on your audio to speak but leave the video off if you are having a bad hair day. LOL I use my laptop mostly for Zoom and the microphone is right in the computer, nothing external. Hope that helps.

My son and DIL set up an Zoom scavenger hunt today. Included our daughter, our son's SIL, his MIL, and everyone's associated families. It was a lot of fun. 3 minute time limit for each item which included - book with the highest number of pages, food with highest calories per serving, oldest manufactured item in the house. We lost but it was a close competition.

That sounds so fun!!

I am not a breakfast eater at all and only rarely eat eggs (unless they're in something else like cake!) :love: Neither of my parents ate breakfast growing up, so I guess I got used to that. I more than make up for eating later in the day, though.

I am grateful for my husband's continued good health. He has stage 3 melanoma and undergoes infusion IV treatments every other week. The cumulative affect of the treatments is starting to take a toll on him physically, but he rarely complains and has a good attitude.

I am so grateful to my husband's employer for being so willing to allow him to attend to his medical appointments and for providing excellent medical insurance to him.

I am also grateful for our children. Our daughter is a high school senior and as with so many others, many milestone events are not happening or postponed. Her attitude is positive and I admire her resiliency.
 
Question of the day: 4/26: Breakfast foods? All in or nope?

Are you breakfast eaters? I really wasn't and still not big eater when I wake up. I need good hour or two before I even think about food.
I wake up early when in a hotel that serves the "free" breakfast buffet because I just can't wake up and roll out for food. I do like breakfast but more brunch person but not fussy. I don't eat lot of eggs in their pure form and I hate the smell of bacon cooking. I'm pretty simple for this meal. I'm thinking biscuits and gravy and sausage for dinner later this week or green chile chilaquiles. Yumm! That sounds like good way to use up rest leftover things. So breakfast for you or no?

I'm not a big breakfast food person. I don't really like eggs unless I'm in the mood for them, and when I do, they have to be perfect fried over medium, made only by me or my dad :laughing: and only with certain foods...tamales and chilaquiles. When we go out for breakfast, I prefer carbs...:laughing:pancakes, waffles, french toast, bagels and cream cheese, toast with butter and jelly, or biscuits and gravy. A local place that has since closed had something called a spud special and it was fried potatos with onion, shredded cheese, sour cream, guacamole, and a really good chunky salsa. Yum....😋 I LOVE chorizo and potatos, I'll usually make chorizo and eggs for the rest of the family while I have the potatoes.


Most of the time I'll just have a banana...
 
Oh I forgot to mention I finally got to do a zoom party last night....it was for one of my oldest friends birthday. Her sister let me know Saturday they were going to be having it and when. I joined a little late as we just got home from out of town jaunt when it started, so it was kind of a surprise that I was joining and my friend was so happy, we haven't seen each other in awhile. It was soo fun and they invited me to a brunch chat next weekend, I can't wait. I did just realize my laptop has no camera, which is weird...it has the lens on the screen. :confused3 So I used my phone instead but I think it would be much better on the laptop for next time. I couldn't see everyone on the screen at the same time on my phone so I felt like I was missing out. I'll have to see if my daughter has a webcam...or maybe I need to buy one.

Sorry being so late tonight. It's been a long day. Nothing bad going on just long day of work and homework and home stuff.
I hope all is well for everyone else and try not to peek onto the other threads if going to cause negative emotions. As this point, every day
we are closer to something else and that's all we know and what we can do. I don't know what the future looks like. Heck most day, I don't know what I'm cooking tomorrow.
We had take out tonight for dinner. It was good and makes me happy to cook again. The whole process of taking out is just weird enough that I don't enjoy and makes me loose the overall appreciation of takeout if that makes sense.

Gratitude today:
1. It was beautiful spring day here and took a nice walk in between appointments to clear my head and heart.
2. Cookie dough ice cream tonight. I need to eat my feelings for a bit.
3. Being blessed with good mind and heart to try to keep going and blessed to be surrounded by good people (people here count!)

I'm a lazy out door person. I love to sit out on the deck and just be. I can hike but it's not up or down the Grand Canyon although I hiked my fat behind out of Carlsbad Caverns! I don't recommend it. I love to go out and see. I love National Parks and hope to hit new one this summer. I asked my husband what he thought about us camping. He started laughing..that's fair. Maybe we can just rent a cabin..

Yes. I enjoy hiking, trails, biking, and camping. In the warmer months (which still hasn't quite happened yet here) I try to be outside as much as I can taking care of the property -- I prefer hard labor outside over the rowing machine or treadmill that I'm relegated to all winter.

We do a tent camp only about once a year now and do cabin 'glamping' twice a year (although this year, who knows). If you are going somewhere with a fully equip cabin it would be a nice compromise for you. Still in the peaceful quiet of the woods but you don't have to walk to the bath house at 3am to take a pee. We originally started doing the cabin because of the kids and it was just a lot easier and more relaxing for me to have a bathroom right in the cabin where I could help them with the potty and shower.

Not a hiker or bike rider.....like to sit around a pool if it is not too hot. I don't like being out when it is too hot.
I do like walking around the neighborhood and of course, Disney Parks.
I am not a spring chicken anymore, so that is about it.

I did hike down the Grand Canyon.....well to the first house stop which was about 1 1/2 miles. Seemed like 25 miles!! It was hard going both up and down. ....and in sandals at that. Won't be doing that again, but am glad I did. With a friend. Took us 3 hours.

Dinner tonight was Chicken Salad casserole.

We are in the midst of spring cleaning......might as well. This is the longest we've gone without some kind of trip.

I like to do trails. I used to like hiking, but my knees/ankles just can't take the punishment anymore. . We've camped in Georgia, Utah, Colorado, Nevada, and Florida. We would have loved to go to more places, but when DH got sick, we had to adjust our plans; and now we are getting old. Told DH we need to get an RV and someone to drive it for us (haha...he scares me driving and I scare him) so we can tour the US when he retires.

I can't ride a bike, or roller blade or ice skate. Between weak ankles and a permanent inner ear problem, I can't seem to center on those. I can roller skate pretty well (at least, the last time I went skating....um, geez, 23-24 years ago...)

We like camping, but I don't like being too deprived of my goodies. I use either an air mattress or my cot (with pad), a big camping stove (uses those big propane bottles you get for a grill) with my French press pot coffee (fresh ground, natch), and some comfy camp chairs to lounge around in. I like to sit and listen to the birds, smell the trees and flowers, watch a pretty sunset (or sunrise). I just want my wi-fi while I do it, haha. I'll fish, but I don't like to clean or touch them. :laughing: I don't like touching the bait either, unless it's just those little egg balls or flies.

I made Italian dressing marinated steak kabobs, yellow rice, and oven roasted cauliflower and carrots for dinner. Pineapple D.W. for dessert, I suppose.
 
I am not at all an outdoor person. I burn easily...I've had 6 2nd-degree sunburns, one even while wearing SPF 50 sunscreen. I hate bugs. I hate dirt. I hate sweating. I have raging year-round allergies. And I am NOT at all interested in camping.

That said, I go outside with my son every single day that the weather is agreeable. I do like to take photos of pretty flowers, sometimes we'll see something interesting...even the clouds can be beautiful. I'm not a fan of the woods or plain old hiking trails, but I like nice landscaped parks - like we have Forest Park in Springfield, MA. I like playing mini golf and that's outdoors. I don't like going to the playground with my son because even if there are other kids around, he wants me to play with him. I'll do it for him, though - and frankly, I'm the only mom who gets up there on the playscapes with my kid, while the other 20-something moms sit on the benches and play with their phones.

I've thought about taking up geocaching. That would get me outside and there would actually be something to do.
 
I am smiling to envision our eventual Minnie's Breakfast Meet Up as it sounds like there are a lot of breakfast fans here. What better place to combine a celebratory meet up than at Disneyland and while we are at it we have to eat--so Minnie's seems ideal. I sincerely hope we can make this happen sometime. When it is safe to start thinking about planning this, remind me, and I'd be happy to help head it up ::MinnieMo I have indeed become extra grateful for this thread and each of you in it.

I am in prayer group at my church. During this pandemic, when we are unable to meet, weekly prayer lists are emailed. I was so thankful to hear that a friend who has been in the hospital (not Covid related) for quite a while is home.

I was excited to get some pink slippers from Amazon this morning that are great.

I enjoyed watching The Price is Right earlier that I had recorded from this morning. I still am nostalgic for the old days when Bob Barker hosted along with the (IMO) simpler colored set but it was fun to watch. I remember years ago one hot Summery day my Dad and I waited in line for a taping. We did not get called to "come on down" but it was an interesting experience.

Lol, I am not much of an outdoor enthusiast though always enjoy watching children play during summer camps at church or the photography campers taking pictures outdoors. There is such joy in children's happy laughter and it also does my heart good to see kids outside in general playing and especially while at church. This all said, when this is over, I will be enormously grateful to God to once again truly feel comfortable being outside.
